1-1/2 cups sugar
1/2 cup canola oil
1 teaspoon vanilla extract
3 cups all-purpose flour
4-1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1-1/2 cups chopped peeled apple
1-1/2 cups finely chopped fresh or frozen rhubarb, thawed
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, whisk eggs, sugar, oil and vanilla until blended. In another bowl, whisk flour, baking powder, salt and cinnamon. Add to egg mixture; stir just until moistened. Fold in apples, rhubarb and walnuts., Transfer to two greased 8x4-in. loaf pans. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool. 2 medium tart apples, peeled and chopped
1 egg
3/4 cup sugar
1/4 cup maple syrup
1/4 to 1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 cup packed brown sugar
Pinch salt
1/2 cup cold butter, cubed

Steps:

½ cup unsalted butter, melted
6 ounces brioche, torn into 1/2 inch pieces
3 cups diced rhubarb
1 Granny Smith apple -- peeled, cored and sliced into thin wedges
⅝ cup dark brown sugar
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
½ lemon, zested and juiced
1 tablespoon butter, diced
⅜ cup warm water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a shallow, 1-quart baking dish.
  • In a medium bowl, combine melted butter and brioche. Line the bottom of the baking dish with one-third of the mixture.
  • In another bowl, combine rhubarb, apple, brown sugar, cinnamon, nutmeg, lemon juice and zest. Let rest until juices begin to run, 5 minutes. Then spread half of the mixture over the brioche in the dish. Top with half the remaining brioche. Spread the remaining rhubarb over that and top with the last of the brioche. Dot with 1 tablespoon butter. Spoon the warm water evenly over the top.
  • Cover and bake in preheated oven 25 to 35 minutes, until rhubarb is tender. Increase oven temperature to 400 degrees F (200 degrees C), uncover dish, and bake until top is crusty, rhubarb is soft, and bubbles form at the edges of the dish, 10 to 15 minutes. Serve warm.

100 g low-fat margarine

  • Preheat oven to 200 degrees C, Grease a 26 cm spring pan.

1 loaf brioche or other soft bread (6 ounces), crusts removed
8 tablespoons unsalted butter (1 stick), melted, plus more for pan and topping
1 Granny Smith apple, peeled, cored, and sliced into quarter-inch-thick wedges
1/2 cup plus 2 tablespoons dark-brown sugar
1/4 teaspoon ground cinnamon
Pinch ground nutmeg
Juice and zest of 1/2 lemon

Steps:

  • Heat oven to 375 degrees. Cut rhubarb into 1/4-inch-thick cubes, yielding about 3 cups. Tear brioche into 1/2-inch pieces, yielding 3 to 3 1/2 cups.
  • Butter a shallow 1-quart baking dish. In medium bowl, combine melted butter and brioche; cover bottom of dish with 1 to 1 1/2 cups brioche. 1 lb stale bread (12-18 slices)
butter, softened for spreading
1 lb fresh rhubarb, peeled and cut into 1/2 inch pieces
2 ounces butter
3 ounces superfine sugar
3 dessert apples, cut into large chunks (approximately 16 per apple)

Steps:

  • Preheat oven to 425 degrees F. This recipe will use 6 3x2inch metal pudding molds or a 4x3 inch cake pan.
  • Butter the bread on one side.
  • Cut six slices of bread into disks that will fit the bases of the molds, plus six to fit the top. If using a single cake pan, cut bread to fit.
  • Remove the crusts from the remaining bread and slice each into 1 inch fingers.
  • Place a disk of bread in each mold, with the butter side down. Lay the fingers around the insides of the molds with the butter against the sides. It is okay if they are slightly overlapping.

  • Divide mixture between the molds then top with the lids. Fold over any excess bread to help secure the lids in place.
  • Bake individual charlottes for 20 minutes or a large charlotte for 40-45 minutes.
  • To serve, turn out of molds and serve with rhubarb sauce.
