I didn't believe the recipe when my friend Lesley gave it to me, but having tasted the slice, and loving it, I tried it and had sucess the first time I made it, eveyone loved it. The family call it my "stolen apple slice" It freezes very well!! UPDATE Jubes used a gluten free cake mix, and reports that it turned out very well. Nice dessert for those people that cant tolerate gluten!

1 (18 ounce) box vanilla cake mix (cheapest available)
1 cup coconut
125 g melted butter
cooked apple
1 (400 g) container light sour cream
cinnamon

Steps:

  • Mix first 3 ingredients together: Press into slice tin, (lined with baking paper) and cook in a moderate oven 20-25 minutes, til very lightly browned.
  • Cool for 10 minutes and then spread cooked apple carefully over base.
  • Pour over about 400gr light sour cream, spread out with the back of a spoon.
  • Sprinkle with cinnamon and bake a further 10 to 15 minutes.
  • Hints: You'll need to cook about a kilo of Granny Smiths for this, (or use canned apples, but NOT the ones without sugar.) Peel and slice your apples and cook with 1/2 cup water, and sugar to taste.
  • Drain and cool before use.
  • Be generous with the baking paper, it makes it easier to lift the slice out of the tin.
  • Cut the slice when it is cold.
  • Nice warm too, but cut in the tin.

1 1/2 cups all-purpose flour
3 teaspoons pure vanilla extract
1 1/2 cups seedless raisins
1 1/4 pounds granulated sugar
1 pound all-purpose flour
1 teaspoon salt
1 1/2 tablespoons ground cinnamon
12 ounces unsalted butter
1/2-ounce pecan pieces

Steps:

  • Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. Stir in flour and vanilla, then cook until thick and pour into 4 (8 by 10-inch) baking dishes. Top with streusel and bake at 350 degrees F until crispy and fruit is bubbling (approx. 40 minutes). Serve warm.
  • Mix butter, sugar, and flour together, until crumbly and mealy looking. Add cinnamon, salt, and pecan pieces. Do not over mix. Store in refrigerator. Streusel topping may be doubled for a thicker coating.

1 cup margarine
1 teaspoon salt
1 egg yolk
2/3 cup milk (to make 2/3 cup with egg yolk)
1 egg white, beaten
8 -10 tart apples, peeled, cored and sliced thin
2 cups corn flakes, crushed (2 handfuls)
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup powdered sugar
1/4 cup water

Steps:

  • Crust: Mix flour and salt. Cut margarine inches.
  • Whisk egg yolk and milk together; mix into flour.
  • Roll out 1/2 of dough large enough to fit into a jelly roll pan.
  • Filling: Sprinkle corn flakes over bottom crust. Spread apple slices evenly over crust. Mix sugar, cinnamon and salt; sprinkle over apples.
  • Roll out remaining dough and cover fruit. Brush top with beaten egg white. Bake at 350°F for about 1 hour, until crust is golden brown.
