Time 1h

Yield 9 to 12 servings

Number Of Ingredients 19

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

Time 1h40m

Yield 4 servings

Number Of Ingredients 17

1 ¼ teaspoons McCormick® Ground Cinnamon
½ teaspoon McCormick® ground ginger
¼ teaspoon McCormick® ground allspice
⅛ teaspoon ground cardamom
⅛ teaspoon freshly grated nutmeg
3 large eggs, room temperature
¾ cup milk, room temperature
¾ cup all purpose flour
½ teaspoon kosher salt
½ teaspoon McCormick® vanilla extract
2 tablespoons granulated sugar
2 tablespoons unsalted butter, cold
2 honeycrisp apples, sliced into ⅓-inch-thick wedges
1 tablespoon granulated sugar
1 tablespoon unsalted butter
vanilla ice cream
Butterscotch sauce

Steps:

  • Make the apple spice blend: In a small bowl, mix together the cinnamon, ginger, allspice, cardamom, and nutmeg with a fork to combine.
  • Make the Dutch baby: Add the eggs, milk, flour, 1¼ teaspoons of the spice blend, the salt, vanilla, and sugar to a blender. Blend on medium speed until well combined and frothy, about 1 minute.
  • Transfer the batter to an airtight container and refrigerate for at least 1 hour, up to overnight.
  • Preheat the oven to 425°F (220°C).
  • Heat a large skillet over medium-high heat for 1-2 minutes. Add the butter and melt, swirling to coat the sides of the pan. Pour in the batter and immediately transfer to the oven. Bake for 20-22 minutes, or until the Dutch baby is puffed and golden brown. Remove the Dutch baby from the oven and cool for 5 minutes. It will deflate slightly as it cools.
  • While the Dutch baby bakes, make the apple filling: in a medium bowl, sprinkle the apples with the remaining teaspoon of apple spice and the sugar and toss until well coated.
  • Melt the butter in a medium skillet over medium heat until foaming. Add the apples and stir to coat. Cook for 3-4 minutes, until the apples have softened, but aren't mushy. Remove the apples from the skillet and set aside.
  • Just before serving, top the Dutch baby with the warm apple filling, vanilla ice cream, and a drizzle of butterscotch sauce.
  • Enjoy!

Number Of Ingredients 19

2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
½ teaspoon ground allspice
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup all purpose flour, divided, plus 1 tablespoon
⅓ cup whole wheat flour
1 ¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt
¾ stick unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
2 large eggs, room temperature
¼ cup apple sauce
1 honeycrisp apple, shredded, plus 2, finely diced, divided
nonstick cooking spray, for greasing
1 ½ tablespoons unsalted butter, melted
2 tablespoons demerara sugar

Steps:

  • Make the apple spice blend: in a small bowl, stir together the cinnamon, ginger, allspice, cloves, and nutmeg.
  • Make the muffins: In a medium bowl, whisk together 1 cup (125 G) all-purpose flour, the whole wheat flour, baking powder, baking soda, salt, and 1 tablespoon of the spice blend.
  • In a large bowl, use an electric hand mixer on medium speed or whisk to beat the butter until light yellow and aerated, about 2 minutes. Add the granulated and brown sugars and continue beating until light, fluffy, and nearly doubled in volume, 2 minutes more. Add the eggs, 1 at a time, beating well after each addition.
  • Add the applesauce and shredded apple and stir with a rubber spatula to incorporate.
  • Add half of the dry ingredients to the wet and gently fold to combine, being careful not to overmix. Add 1¾ cups of the diced apples to the remaining dry ingredients and toss to coat, then add to the wet ingredients and gently fold to combine. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, up to overnight.
  • Preheat the oven to 425°F (220°C). Line a 6-cup jumbo muffin tin with paper liners and lightly grease with nonstick spray.
  • In a medium bowl, toss together the remaining ¾ cup diced apples, melted butter, remaining 1 tablespoon flour, and remaining 1½ teaspoons of apple spice blend.
  • Evenly divide the batter between the prepared muffin cups. Top each muffin with some of the apple topping and sprinkle with the demerara sugar.
  • Bake the muffins for 15 minutes, then rotate the muffin tin 180° and bake for 12-15 minutes more, until the muffins are puffed and golden brown and a cake tester inserted into the center comes out clean.
  • Let cool for 15-20 minutes before serving.
  • Enjoy!

Tips:

  • Choose the right apples: Use a variety of apples that are good for baking, such as Granny Smith, Honeycrisp, or Braeburn. Avoid using overly soft or mealy apples.
  • Slice the apples thinly: This will help them to cook evenly and release their flavor into the tisane.
  • Use fresh spices: Freshly ground cinnamon, nutmeg, and cloves will give your tisane the best flavor. Avoid using pre-ground spices, as they can be less flavorful.
  • Sweeten to taste: If you like your tisane sweet, add a little honey or sugar to taste. You can also add a splash of lemon juice for a bit of tartness.
  • Serve warm or cold: Apple spice tisane can be served warm or cold. If you're serving it warm, heat it gently over medium heat until it's just simmering. If you're serving it cold, let it cool completely before refrigerating.

Conclusion:

Apple spice tisane is a delicious and comforting drink that's perfect for enjoying on a cold day. It's also a great way to use up leftover apples. With just a few simple ingredients, you can make a pot of apple spice tisane that the whole family will love. So next time you're looking for a warm and cozy drink, give apple spice tisane a try.
