ROASTED APPLES AND SWEET POTATOES

Roasted Apples and Sweet Potatoes image

Looking for an alternative to baked sweet potatoes, I found this wonderful recipe in Southern Living magazine. It is a great side dish for pork or Thanksgiving dinner. The hint of orange really adds some zest(no pun intended) to these everyday ingredients. If you prefer your apples crisp rather than tender, you can bake them for a little less time.

Tips:

  • Choose the right sweet potatoes. Look for sweet potatoes that are firm and have smooth, unblemished skin. Avoid sweet potatoes that are soft or have bruises or cuts.
  • Scrub the potatoes well before cooking. This will help to remove any dirt or bacteria from the skin.
  • Pierce the potatoes with a fork before baking. This will help them to cook more evenly.
  • Bake the potatoes until they are tender. The cooking time will vary depending on the size of the potatoes, so be sure to check them regularly with a fork.
  • Let the potatoes cool slightly before handling them. This will help to prevent them from breaking apart.
  • Mash the potatoes with a potato masher or food processor until they are smooth and creamy. You can also add other ingredients to the potatoes, such as butter, milk, spices, or herbs.
  • Serve the potatoes immediately or store them in the refrigerator for later use.
