My mom made this, minus the apple chunks, when we were sick or as a special treat. The applesauce adds a great texture, kids love it, and if they don't like fruit, they'll still usually eat this! In fact, without the chunks or the cinnamon, it's a great treat for toddlers. I make it with cinnamon applesauce and the apple chunks as a side for holiday meals.

1 (3 ounce) package cherry gelatin or 1 (3 ounce) package wild cherry gelatin
1 cup boiling water
1 1/4-1 1/2 cups applesauce or 1 1/4-1 1/2 cups cinnamon applesauce, chilled (a small jar usually works just fine)
1 -3 firm-sweet apple, cored and cut into 1/2 inch chunks (such as Fuji; use more or less according to size and preference) (optional)

Steps:

  • Dissolve gelatin into boiling water in a LARGE bowl (you're going to want the room when you add the other ingredients to prevent splashing).
  • Add applesauce all at once.
  • Stir until thoroughly mixed.
  • Pour into an 8 by 8 casserole or a shallow dish, and cover.
  • Refrigerate until partially set (about 1 1/2 hours is good).
  • Stir in apple chunks, if desired.
  • Refrigerate an additional 1 1/2 to 3 hours, until set.
  • This recipe will not set quite as firm as traditional gelatin.

2 (3 ounce) packages sugar-free raspberry gelatin
1 cup unsweetened orange juice
1 cup diet 7-Up

Steps:

  • Heat applesauce (she suggested using the microwave).
  • Stir in the Jello till dissolved.
  • Stir in the orange juice.
  • Carefully pour in the 7-UP.
  • Chill until slightly gelled (consistency of an egg white).

2-1/2 c boiling water
2/3 c small red hot cinnamon candies
2 3-oz pkgs lemon jello
2 c canned sweetened apple sauce
1 8 oz pkg cream cheese
1/2 c mayonnaise
1/2 c chopped nuts, or chopped celery can be added.

Steps:

  • 1. Combine boiling water with cinnamon candies in a saucepan, stir over low heat to dissolve candies. remove from heat stir in gelatin. Blend in applesauce. Pour half of mixture into a 2 quart mold or an 8 inch square pan. Chill until firm. Blend softened cream cheese with mayonnaise, add chopped nuts, and or chopped celery. Spread cream cheese mixture over chilled mixture. Pour remaining gelatin mixture over cream cheese mixture. Chill all several hours till firm.
