Time P1DT8h30m

Yield 128

Number Of Ingredients 5

3 ½ pounds fresh apricots, pitted and finely chopped
7 cups white sugar
¼ cup fresh lemon juice
1 (1.75 ounce) package fruit pectin (such as Sure-Jell Premium Fruit Pectin®)
½ cup finely chopped fresh lemon balm

Steps:

  • Measure apricots after preparation; you should have 5 cups prepared fruit.
  • Combine apricots, sugar, and lemon juice in a large plastic or glass bowl; mix well. Cover and refrigerate 8 hours to overnight.
  • Inspect 7 to 9 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Transfer apricot mixture and all of the accumulated juice to a large saucepan. Stir in pectin and slowly bring to a full rolling boil that does not stop bubbling when stirred. Cook for 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
  • Remove from heat and stir in lemon balm leaves.
  • Ladle apricot jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

8 cups fresh apricots - peeled, pitted, and crushed
¼ cup lemon juice
6 cups white sugar

HOMEMADE APRICOT JAM

Homemade Apricot Jam image

Preserve the taste of summer with luscious jam.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Yield Makes about 9 8-ounce jars

Number Of Ingredients 3

12 cups fresh, bright-skinned apricots
12 cups sugar
1/2 cup water

Steps:

  • Halve and pit apricots. Wrap half the pits in cheesecloth, and crack the remaining ones open with a hammer. Pick out the kernels and set aside. Discard the cracked shells.
  • Heat the oven to 200 degrees. Place sugar in a large shallow pan and put in oven. Turn off oven and let sugar warm for about 15 minutes, stirring occasionally.
  • Meanwhile, combine the apricots and water in a large kettle over low heat. Cook until tender, 10 to 15 minutes. Then add the warmed sugar and wrapped pits and simmer for 30 minutes; remove pits and continue cooking until mixture reaches 221 degrees on a candy thermometer or falls in sheets from a spoon, about 15 minutes more.
  • Remove from heat. Skim off and discard foam. Stir in reserved kernels, then ladle jam into hot, sterilized jars, leaving 1/4-inch head space. Wipe excess jam from inside and outside rims, then seal.

Tips

  • Choose the right apricots: Use ripe and firm apricots for the best flavor and texture. Avoid any that are bruised or blemished.
  • Prepare the apricots properly: Wash the apricots thoroughly and remove the pits. If you prefer, you can also peel them, but this is not necessary.
  • Use fresh lime juice: Fresh lime juice is essential for the bright flavor of this jam. Avoid using bottled lime juice, as it will not have the same flavor or acidity.
  • Cook the jam over medium heat: Cooking the jam over medium heat will help to prevent it from scorching and sticking to the pot. Stir the jam frequently to ensure that it cooks evenly.
  • Use a candy thermometer: A candy thermometer is the best way to ensure that the jam reaches the correct consistency. The jam is ready when it reaches a temperature of 220 degrees Fahrenheit (105 degrees Celsius).
  • Let the jam cool completely: Once the jam is cooked, let it cool completely before storing it. This will help to thicken the jam and develop its flavor.

Conclusion

Apricot and lime jam is a delicious and versatile condiment that can be enjoyed on toast, scones, yogurt, or even ice cream. It is also a great way to use up fresh apricots when they are in season. With a little bit of time and effort, you can easily make your own apricot and lime jam at home. So next time you have a few spare hours, give this recipe a try. You won't be disappointed!
