Time 1h30m

Yield 12 servings

Number Of Ingredients 24

1 1/2 cups water
1 cup dark molasses
1 teaspoon baking soda
1 cup (6-ounce package) dried apricots, julienned
1 1/2 cups apple cider
3/4 cup packed brown sugar
1 tablespoon cornstarch
4 tablespoons unsalted butter
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cloves
8 Granny Smith, Braeburn, or pippin apples, peeled, cored, and chopped
3 1/4 cups flour
2 teaspoons ground ginger
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
1 cup packed brown sugar
1/2 cup (1 stick) unsalted butter, at room temperature
1 large egg
Whipped cream, for serving

Steps:

  • To make the molasses mixture: In a tall 6-quart pan, bring the water and molasses to a boil. Remove from heat and stir in the baking soda. The mixture will foam up. Set aside to cool.
  • In a small saucepan, bring the apricots and 1 cup of the apple cider to a boil. Remove from heat and let the apricots plump for about 20 minutes.
  • Preheat the oven to 350 degrees F. Spray a 9 by 13-inch baking dish with vegetable oil cooking spray.
  • In a medium saucepan, blend the brown sugar and cornstarch. Stir in the remaining 1/2 cup apple cider, the butter, cinnamon, salt, and cloves. Cook over medium heat until clear and thickened. Stir in all but 1/4 cup of the plumped apricots. Stir in all but 3/4 cup of the apples. Pour the mixture into the prepared dish; set aside.
  • To make the cake layer: Sift the flour, ginger, baking powder, cinnamon, cloves, allspice, pepper, and salt together into a medium bowl; set aside.
  • In a mixer bowl, using the mixer on high speed, cream the brown sugar and butter until light and fluffy. Add the egg, beating until creamy. On low speed, alternately blend in the dry ingredients and the molasses mixture. The batter will be thin. Stir in the reserved apricots and apples. Pour the cake batter over the fruit layer in the baking dish. Bake for 40 to 45 minutes, or until a toothpick inserted just into the cake layer comes out clean. Let cool slightly and serve with whipped cream.

CHICKEN WITH APRICOTS AND CIDER

Chicken With Apricots and Cider image

This is a warming stew - lovely served with mashed potatoes and a green vegetable. It freezes very well, and is easy to cook in larger (or smaller) quantities. It should be noted that the cider used here is not the cloudy apple juice drunk in the USA, but rather a fermented, alcoholic drink made from apples.

Categories     Stew

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 9

1 tablespoon olive oil
8 chicken thighs
2 medium onions
2 tablespoons flour
300 ml chicken stock
300 ml dry cider
100 g dried apricots, halved
50 g peeled walnut halves (optional)
salt and pepper

Steps:

  • Heat the olive oil in a large saute pan, and brown the skin sides only of the chicken thighs (you may have to do this in batches), moving them to a dish once browned.
  • Depending on how much fat has rendered from the chicken skin, you may want to pour some off - you want about 2 tbsp remaining in the pan.
  • Coarsely chop the onion, and add to the pan. Fry until softened and translucent, then stir in the flour.
  • Cook the flour mixture for a minute or so, then slowly add the chicken stock and cider, stirring all the time to mix.
  • Stir in the apricots, and return the chicken thighs to the pan. Cover and simmer on a low heat for 45 minutes, stirring occasionally.
  • If you are using the walnuts, stir them in 20 minutes before the end of the cooking time.
  • Season if necessary, and serve.

Tips:

- For the best flavor, use fresh, ripe apples and apricots. - If you don't have fresh apricots, you can use dried apricots. Just be sure to soak them in hot water for 15 minutes before using. - If you want a sweeter cider, add more honey or maple syrup. - For a more tart cider, add less honey or maple syrup. - You can also add other spices to your cider, such as cinnamon, nutmeg, or cloves. - If you want a sparkling cider, add some club soda or ginger ale. - Serve your cider warm or cold, depending on your preference.

Conclusion:

Apricot apple cider is a delicious and refreshing drink that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and delicious drink, give apricot apple cider a try!
