Tips:

- **Use ripe bananas:** Overripe bananas add sweetness and moisture to the muffins. If your bananas are not ripe enough, you can ripen them quickly by placing them in a paper bag with an apple at room temperature for a day or two. - **Mash the bananas well:** The smoother the bananas are, the better the muffins will be. You can use a fork or a potato masher to mash the bananas. - **Use fresh apricots:** Fresh apricots add a delicious tartness to the muffins. If you don't have fresh apricots, you can use dried apricots. Just be sure to chop them finely before adding them to the batter. - **Don't overmix the batter:** Overmixing the batter will make the muffins tough. Mix the batter just until the ingredients are combined. - **Fill the muffin cups only 2/3 full:** The muffins will rise as they bake, so don't fill the muffin cups all the way to the top. - **Bake the muffins until a toothpick inserted into the center comes out clean:** The muffins are done baking when a toothpick inserted into the center comes out clean.

Conclusion:

These apricot banana muffins are a delicious and healthy treat that are perfect for breakfast, lunch, or a snack. They are easy to make and can be customized to your liking. Try adding different spices, such as cinnamon or nutmeg, or different fruits, such as blueberries or raspberries. You can also top the muffins with a streusel topping or a glaze. No matter how you choose to make them, these apricot banana muffins are sure to be a hit!
