  • Mix egg substitute, juice, milk and oil; add fruit and mix into dry ingredients till just moistened.
  • Pour into prepared muffin tins.
  • Bake 15-17 minutes.

Tips:

  • Use ripe, fresh apricots: This will give your muffins the best flavor and texture.
  • Omit the nuts or choose a different variety: If you don't like walnuts or have a nut allergy, you can leave them out or substitute another type of nut, such as almonds or pecans.
  • Reduce the sugar if desired: The muffins are not overly sweet, but you can reduce the amount of sugar by 1/4 cup if you prefer.
  • Use a combination of whole wheat and all-purpose flour: This will give your muffins a nice balance of flavor and texture. If you only have one type of flour, you can use all whole wheat or all-purpose.
  • Don't overmix the batter: Overmixing will make your muffins tough. Stir just until the ingredients are combined.
  • Fill the muffin cups almost to the top: This will give your muffins a nice rise.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that your muffins are cooked through.
  • Let the muffins cool completely before frosting them: This will help the frosting set properly.
