APRICOT OAT CAKES

Time 35m

Yield 12 Oat Cakes, 12 serving(s)

Number Of Ingredients 9

3 cups rolled oats
2 cups flour
1/4 teaspoon baking powder
1/3 cup plain fat-free yogurt (or non-dairy yogurt)
1/2 cup dry sweetener (I use Splenda)
1/2 cup honey (or agave nectar)
1/2 teaspoon vanilla
1 egg white (or equivalent)
1/2 cup dried fruit, chopped (I use 12 dried apricots)

Steps:

  • Thoroughly grind rolled oats in food processor or blender. Mix with flour and baking powder.
  • In a separate bowl, "cream" together yogurt, dry sweetner, honey and vanilla. In yet another bowl, lightly beat egg white until it gets bubbly but not stiff. Fold egg white into wet ingredients. Add dried fruit.
  • Combine wet and dry ingredients. The dough gets pretty stiff and is hard to mix. You may even have to dive in there with your hands and squish it together. Add water if the mixture is too dry. Form into 12 patties.
  • Bake at 325 degrees F for 15 minutes on a non-stick cookie sheet. Cool completely and store in refrigerator. These keep well and may be frozen.

APRICOT CAKE

Apricot Cake image

Provided by Florence Fabricant

Categories     dessert

Time 1h

Yield 6 servings

Number Of Ingredients 10

1/4 pound unsalted butter, at room temperature
3/4 cup flour
3/4 teaspoon baking powder
Pinch of salt
1 cup light-brown sugar
3 large eggs
1 teaspoon vanilla extract
4 large or 6 medium ripe apricots, pitted and cut in eighths, or other fruit like plums, peaches, nectarines or berries, or a mixture
2 tablespoons granulated sugar
Creme fraiche, whipped cream or vanilla frozen yogurt

Steps:

  • Preheat oven to 350 degrees. Use a little of the butter to grease a 9-inch round baking pan with a removable bottom. Dust the pan with a little of the flour. Sift the remaining flour with the baking powder and salt and set aside.
  • Cream the remaining butter with the brown sugar. Beat in the eggs, one at a time. Stir in the flour mixture and the vanilla.
  • Spread the batter in the baking pan. Arrange the apricot slices on the top. Put in the oven and bake about 25 minutes, until the top of the cake looks fairly firm and is just beginning to brown.
  • Sprinkle with the granulated sugar, return to the oven and bake another 10 to 15 minutes, until the cake is nicely browned. Remove from the oven, allow to cool 10 minutes, then remove the sides of the pan. Serve the cake while it is still warm, with creme fraiche, whipped cream or vanilla frozen yogurt on the side.

Tips:

  • When selecting oats, opt for old-fashioned or rolled oats for a satisfying texture. Avoid quick-cooking oats as they tend to become mushy.
  • To achieve the perfect balance of sweetness, use a combination of granulated sugar and brown sugar. Brown sugar adds depth and moisture to the cake.
  • For a gooey apricot filling, choose ripe and juicy apricots. If fresh apricots are unavailable, dried apricots can be rehydrated and used.
  • To ensure the cake rises evenly, make sure all ingredients are at room temperature before mixing. This allows them to combine more easily and helps the leavening agents work more effectively.
  • Do not overmix the batter, as this can result in a tough and dense cake. Mix just until the ingredients are combined.
  • For a crispy oat topping, use a combination of old-fashioned oats, chopped nuts, and melted butter. Press the topping firmly onto the batter before baking.
  • To prevent the cake from sticking to the pan, grease and flour the baking pan before pouring in the batter.
  • Bake the cake until a toothpick inserted into the center comes out clean. Overbaking can dry out the cake and make it crumbly.
  • Allow the cake to cool completely before serving. This helps the flavors to meld and the cake to set properly.

Conclusion:

The apricot oatmeal cake is a delightful combination of flavors and textures that is sure to please everyone. With its tender crumb, gooey apricot filling, and crispy oat topping, this cake is perfect for any occasion. Whether you are looking for a sweet treat for breakfast, a dessert to serve at a potluck, or a special snack, this apricot oatmeal cake is sure to hit the spot. Enjoy!
