Yield Makes about 5 dozen

Number Of Ingredients 3

Basic Vanilla Cookie Dough
3/4 cup chopped pistachios (optional)
1/2 cup apricot jam

Steps:

  • Roll dough into 1-inch balls, then roll in finely chopped nuts, if using. Arrange on parchment-lined baking sheets, spacing each 1 inch apart.
  • Press a well into the center of each using your finger. Refrigerate until firm, about 30 minutes. Bake at 350 degrees for 7 minutes. Remove from oven, and press well again with handle end of a wooden spoon. Bake until firm, 7 to 9 minutes more.
  • Let cool completely. Spoon jam filling into thumbprints.

Tips:

  • To achieve the perfect thumbprint shape, use a rounded teaspoon to press the dough into the muffin tins. This will create a deep indentation for the apricot filling.
  • For a more intense apricot flavor, use homemade apricot preserves or jam. You can also add a teaspoon of almond extract to the filling for an extra boost of flavor.
  • If you don't have muffin tins, you can also bake these thumbprints in a 9x13 inch baking pan. Just be sure to space them out evenly so they don't stick together.
  • These thumbprints can be stored in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 2 months. To freeze, place the thumbprints in a single layer on a baking sheet and freeze for 1 hour. Then, transfer them to a freezer-safe bag and freeze for up to 2 months.

Conclusion:

Apricot thumbprints are a delicious and easy-to-make treat that are perfect for any occasion. They're soft and chewy, with a sweet and tart apricot filling. These cookies are sure to be a hit with your friends and family.
