HOLIDAY CLASSIC WASSAIL

Time 20m

Yield 6-10 serving(s)

Number Of Ingredients 8

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

Tips for Making Apricot Wassail:

  • Use fresh apricots: Fresh apricots will give your wassail the best flavor. If you can't find fresh apricots, you can use dried apricots, but be sure to soak them in hot water for 30 minutes before using.
  • Choose a good quality wine: The wine you use will have a big impact on the flavor of your wassail. Choose a wine that you enjoy drinking on its own.
  • Add spices to taste: The spices you use in your wassail can vary depending on your personal preference. Some common spices that are used in wassail include cinnamon, cloves, nutmeg, and ginger.
  • Sweeten to taste: Wassail is traditionally sweetened with honey or sugar. You can also use maple syrup or agave nectar if you prefer.
  • Serve warm: Wassail is best served warm. You can warm it up in a slow cooker or on the stovetop over low heat.

Conclusion:

Apricot wassail is a delicious and festive drink that is perfect for the holiday season. It is easy to make and can be tailored to your own personal taste. Whether you like your wassail sweet, spicy, or somewhere in between, there is a recipe out there that is perfect for you.
