24 jalapeno peppers
1 pound sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
1 (16 ounce) package Monterey Jack cheese, cubed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
  • Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.
  • In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.
  • Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.
  • Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.

1 (8 ounce) package cream cheese, softened
¼ cup bacon bits
1 tablespoon chopped fresh chives
1 teaspoon hot sauce
1 pound pork sausage
1 cup shredded Cheddar cheese
1 (5.5 ounce) package seasoned coating mix
⅛ teaspoon ground cumin
⅛ teaspoon chili powder
16 fresh jalapeno peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the cream cheese, bacon bits, chives, and hot sauce. In a separate bowl, mix the uncooked sausage and Cheddar cheese. On a flat surface, mix the seasoned coating mix, cumin, and chili powder.
  • Cut a slit lengthwise into each jalapeno pepper, and remove the seeds. Stuff the peppers with the cream cheese mixture. Press the sausage mixture around the stuffed jalapenos, and roll in the seasoned coating mix to coat.

3 cans (12 ounces each) pickled jalapeno peppers
4 cups shredded cheddar cheese, divided
1 pound bulk pork sausage
1-1/2 cups biscuit/baking mix
3 large eggs, lightly beaten
2 envelopes pork-flavored seasoned coating mix

Steps:

  • Cut each jalapeno in half lengthwise; remove seeds and stems. Stuff each pepper half with about 1 tablespoon cheddar cheese. In a bowl, combine the uncooked sausage, biscuit mix and remaining cheese; mix well. Shape about 2 tablespoonfuls around each pepper., Dip into eggs, then roll in coating mix. 24 fresh, medium jalapeno peppers
1 1/2 lb hot pork sausage
2 c bisquick
1 Tbsp garlic salt
2 lb monterey jack or cheddar cheese, cubed
bread crumbs for coating

Steps:

  • 1. Preheat oven to 325°F.
  • 2. Trim off the stems of each pepper. Cut a slit down one side of each pepper. Remove the seeds and as much of the white membrane as possible. Set aside.
  • 3. In a medium bowl, combine the sausage, Bisquick and garlic salt. Mix well (by hand is easiest).
  • 4. Gently insert one or two cubes of the cheese into each jalapeno.
  • 5. Pinch off a portion of the sausage mixture and shape it around each jalapeno, covering it completely but don't make too thick. Make into egg shape.
  • 6. Roll each "egg" in bread crumbs to coat.
  • 7. Arrange the "eggs" evenly on a prepared (sprayed with cookng spray)cookie sheet. Spray "eggs" lightly with cooking spray and bake for 25 minutes until lightly browned.

20 whole pickled jalapeno peppers (I use a large can of San Marcos brand, you can also use fresh jalapenos, steamed for a few minutes)
1 lb pork sausage (I use Hot Pork Sausage from Owens)
1 cup breadcrumbs
1 egg
1 (8 ounce) container soft cream cheese (I use non-fat)

Steps:

  • Cut off stems of jalapenos; using a knife and scooping action, remove all seeds and ridges. Rinse well; be sure you have all the seeds out!
  • Combine sausage, egg, and bread crumbs in a bowl.
  • Fill jalapenos with cream cheese, using a spoon or cake decorator with large tip.
  • Make small patties with the sausage mix; wrap one around each jalapeno, sealing it with your fingers.
  • Place on cookie sheet; bake in over at 350 degrees for 20-30 minutes. Let cool, cut in half across the middle. Makes 40 Jalapeno eggs.
  • Serve with or without a salsa dip.

2 cups shredded Cheddar cheese
1 pound ground pork sausage
2 (10 ounce) cans refrigerated biscuit dough

  • Slice jalapenos lengthwise to remove seeds. Stuff jalapenos with Cheddar cheese.

3 cups shredded sharp Cheddar cheese (12 oz)
2 cups shredded Monterey Jack cheese (8 oz)
1 lb bulk mild pork sausage
2 cups Original Bisquick™ mix
2 eggs
1 package (6 oz) seasoned coating mix for pork

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray. Cut lengthwise slit on one side of each chile, leaving other side intact; remove seeds. Stuff each chile with about 2 teaspoons Cheddar cheese. Pinch edges to close; set aside.

8 whole pickled jalapenos
4 precooked breakfast sausage links, cut in 1/2 (recommended: Jimmy Dean)
1 cup shredded pepper jack cheese
1 can croissant rolls (recommended: Pillsbury Crescent Rolls)

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut each jalapeno in half removing the stem and seeds. Place precooked sausage in 1 half of the jalapeno and sprinkle the other half with cheese, roughly reforming the jalapeno.
  • Pop open the package of croissant rolls. On a work surface, unroll 1 roll placing the longest side toward you.
  • Place the stuffed jalapeno on top of the dough and roll away from you. Place on an ungreased cookie sheet. Repeat with remaining peppers and dough. Sprinkle the tops with remaining cheese. Bake 10 to 12 minutes until golden brown.

1/2 lb shredded monterey jack cheese
1/2 lb shredded cheddar cheese
1/2 lb hot breakfast sausage
1 1/2 cups Bisquick
1 egg, beaten
1 (5 ounce) package spicy Shake-n-Bake
20 jalapenos

Steps:

  • Slice the peppers in half lengthwise down one side only and scrape out the seeds. If you accidentally cut all the way through, just try to keep the two halves together.
  • Mix Bisquick, sausage and cheddar in a large bowl.
  • Place the beaten egg in a shallow bowl,.
  • also put the Shake N Bake in a shallow bowl.
  • Stuff each pepper with shredded jack, then stick the halves back together, if separated.
  • Grab a handful of the sausage mixture and wrap around the pepper in the shape of an elongated egg.

4 pounds Jimmy Dean Regular or Hot sausage
15 - 20 Jalapeno peppers
2 white onions
1 bulb garlic
1 8 ounce tub of whipped cream cheese
1 8 ounce bar of pepper jack cheese
1 egg
1 cup bread crumbs
Yellow food coloring
Barbecue rub

Steps:

  • Finely chop the onions, 3 or 4 jalapenos, and garlic. Let the cream cheese soften as needed. Shred the Pepper Jack cheese. Slice the remaining whole jalapeno peppers in half vertically and clear out all of the seeds and pith. Keep the matched pepper halves together. In a large bowl, mix the cream cheese with the pepper jack cheese. Mix in enough yellow food coloring to approximate the color of egg yolk. The food coloring will not effect the taste but adds a little something special to the presentation. Sauté the onions and diced peppers in vegetable oil or butter over medium heat. Add the garlic to the sauté about 2 minutes prior to completion. Drain and thoroughly mix the sauté with the cheeses. Fill each pepper half and then stick two matched halves together. Refrigerate the stuffed peppers when done. Use another bowl and mix together the sausage, egg, bread crumbs, and a couple of tablespoons of your favorite BBQ rub thoroughly. Place this sausage mixture in the refrigerator when done. Take the stuffed jalapenos out of the fridge along with the sausage mixture. Grab a handful of the sausage and mold it around one of the stuffed peppers. You want to make sure the sausage completely covers the pepper. The final product should take on the shape of the pepper and thus have an egg shape to it. The easiest way to accomplish this shaping process is to use plastic gloves and shape each egg by hand. Try and get an even layer of sausage around each pepper. Sprinkle BBQ rub on the eggs. Bake at 325 degrees for 20 minutes. (These may be frozen ahead of time, then re-heated).
