ARMENIAN LAMB AND GRILLED VEGETABLES

Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 17

2 Japanese eggplants (about 8 inches long), ends trimmed and each cut into 6 round slices
2 small zucchini, ends trimmed and each cut into 6 round slices
2 red onions, cut into about 6 wedges from top to root end
12 large cherry tomatoes
Olive oil, for drizzling
1 tablespoon plus 1 teaspoon zaatar
Kosher salt and freshly ground black pepper
8 lamb loin chops, at room temperature
1/3 cup olive oil
2 tablespoons white wine vinegar, preferably chardonnay
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1 red serrano chile, seeded and finely diced
1 shallot, minced
Kosher salt and freshly ground black pepper

Steps:

  • For the lamb and vegetables: Thread the eggplant slices onto 2 parallel skewers, piercing through the skin to stabilize the slices flat. Thread the zucchini slices the same way on 2 more skewers. Thread the onion slices the same way, piercing through the widest part of the slices. Finally, thread the tomatoes the same way, piercing though their equators with the stem sides facing up.
  • Place skewers on a sheet tray and drizzle and season all sides with olive oil, 1 teaspoon zaatar, salt and pepper.
  • Drizzle both sides of each lamb chop with olive oil and season with salt, pepper and remaining tablespoon zaatar.
  • Preheat a grill or grill pan for cooking over medium-high heat and heat a wide, heavy-bottomed braiser or Dutch oven over medium-high heat and drizzle with olive oil. Sear the lamb chops in the braiser for 3 to 4 minutes per side for medium, or until an instant-read thermometer inserted through the center of the meat (avoid bone) reads 135 degrees F. Cover with foil and let rest while you grill the vegetables.
  • Grill the eggplant and zucchini skewers, flipping once, until they have grill marks and are slightly tender, 3 to 5 minutes total. Meanwhile, grill the onion skewers, flipping once, until slightly charred and tender, 7 to 8 minutes total. Grill the tomatoes, flipping once, until they just start to burst and release their juices, 5 to 6 minutes total.
  • For Herb Sauce: Stir together the olive oil, vinegar, dill, mint, parsley, garlic, serrano and shallot in a small bowl. Season to taste with salt and pepper.
  • Remove the vegetables from the skewers to a serving platter or bowl. Place the lamb chops on a second platter and drizzle with the herb sauce and any juice left behind in the pan.

LAMB BURGERS

Lamb Burgers image

I bought a selection of lamb cuts from a CSA and got several one-pound packages of ground lamb. I made the last one tonight, and it was the best of all. Top them with Dijon mayo, tomato slices, and baby greens.

MEDITERRANEAN LAMB BURGERS

These burgers are juicy and full of flavor. Even people who don't really like lamb have enjoyed these burgers. You can double the recipe and freeze half of the patties in wax paper to eat at a later time. Fine to place on the grill frozen (just add to the cooking time).

2 teaspoons cumin seeds, toasted and ground
2 teaspoons kosher salt
Pinch cayenne pepper
1/4 cup extra-virgin olive oil, plus more for oiling bowl
1 cup champagne vinegar
1 tablespoon sugar
1/2 tablespoon kosher salt
2 mint tea bags

3 fresh mint stems (leaves reserved for something else), optional
3 fresh dill stems, same deal as the mint stems
3 fresh oregano stems, same deal as the mint stems
8 ounces feta, coarsely crumbled
1/2 cup plain Greek yogurt

Steps:

  • Coat a large saute pan with olive oil, toss in the diced onions and season with salt and crushed red pepper. Bring the pan to medium-high heat and cook the onions for 3 to 4 minutes. Add the garlic and cook for 2 to 4 more minutes. Turn the heat off and let cool.
  • In a large bowl, combine the lamb, the cooled onion mixture, the dill, mint, oregano, lemon zest and 1/2 to 3/4 cup water. Sprinkle with salt and combine well. Make a little "tester patty," cook it and taste for seasoning.
  • Preheat the grill.
  • Form the lamb mixture into 4 equal patties and sprinkle with salt. Grill the burgers to your desired doneness, 4 to 5 minutes per side for medium-rare. Remove the burgers from the grill and let rest for 3 to 4 minutes.
  • Cut the Whole-Wheat Pitas in half. Schmear each half generously with the Pickled Feta Spread. Top one half with a burger, then tomatoes, sliced onions and spinach. Place the other pita half on top.
  • In a small bowl, combine the warm water, sugar and yeast and let sit for 15 minutes.

  • Preheat the oven to 500 degrees F.
  • Divide the dough into 8 equal pieces and roll into 7-inch rounds (1/4-inch thick). Divide the dough between 2 sheet trays, cover them loosely with a clean tea towel or plastic wrap and let rest for 20 minutes.
  • Bake the pitas for 3 to 4 minutes, then turn the pitas over and bake for 2 more minutes. Let cool and use as desired.
  • Place the vinegar, sugar, salt, tea bags, bay leaf and herb stems, if using, in a small saucepan along with 1 cup water. Heat until the sugar and salt has dissolved. Remove from the heat and let cool.
  • Place the feta in a small container. Add the vinegar mixture and be sure that the feta is submerged in the liquid. Let sit for a couple of hours outside the refrigerator if using right away, or in the refrigerator if using in the future.
  • Strain the feta from the pickling liquid and discard the tea bags, bay leaf and stems. Place the feta in a food processor and add the yogurt. Pulse until combined.

ROAST LEG OF LAMB-ARMENIAN STYLE!

Roast Leg of Lamb-Armenian Style! image

I figured that pleasing my guests was just as important as pleasing me. With this recipe I actually pleased all of us. I must say that this was the best leg of lamb I had ever roasted. It was succulent, tender and very savory throughout. The spices combined very well so as to enhance the flavor of the lamb rather than cover it. We were all very pleased with the meat, and I would certainly serve it again. ARMENIAN POWER!

Categories     Lunch/Snacks

Time 5h18m

Yield 4 serving(s)

Number Of Ingredients 7

3/4 lb ground lamb, not too lean
1/4 lb ground beef
1 medium onion, chopped
2 tablespoons chopped parsley
2 tablespoons green peppers, chopped fine
3/4 cup tomato juice
salt and pepper

Steps:

  • Knead all the ingredients together.
  • Let stand for 5 hrs in the fridge,.
  • Shape into patties, place on a baking pan and broil both sides. Serve with the drippings.
  • These can also be pan fried or grilled, but it's not the same. So I very much recommend cooking them as directed in the recipe, as the pan drippings are pretty much key in this. Broiling/cook time will depend on the thickness of your patties and how well you like them done. I'm gonna say 18 minutes just for a roundup/ballpark est.
