Vegetable oil, for deep frying (about 4 cups)

Once boiling, and some salt and cover the pot and transfer to the oven until the liquid is absorbed and the rice is cooked through, about 18 minutes.

  • For the fried plantains: Fill a medium straight-sided skillet halfway full with oil. Place the skillet over medium-high heat and heat until the oil reaches 350 degrees F on a deep-fry thermometer.

ARROZ BLANCO (MEXICAN WHITE RICE)

Arroz Blanco (Mexican White Rice) image

When most people think of Mexican rice, they think of the typical tomato-flavored rice. When I've been in Mexico, however, I've been served this type of white rice often. This recipe is authentic Mexican and comes from Rick Bayless.

Categories     White Rice

Time 35m

Yield 5 cups, 5-6 serving(s)

Number Of Ingredients 8

2 1/2 cups chicken broth or 2 1/2 cups water
salt
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 1/2 cups white rice, preferably medium-grain
1 small white onion, chopped
2 garlic cloves, peeled and finely chopped
1 tablespoon fresh lime juice
3 tablespoons roughly chopped fresh flat-leaf parsley, for garnish

Steps:

  • In small saucepan or microwave oven, heat broth or water until steaming.
  • Stir in about 3/4 teaspoon salt if using salted broth, 1 1/2 teaspoons if using unsalted broth or water.
  • Cover and keep warm.
  • In medium (3-quart) saucepan with a tight-fitting lid, heat the oil over medium heat.
  • When hot, add raw rice and onion and stir regularly until grains have turned from translucent to milky-white, 4-5 minutes.
  • Add garlic and stir for a few seconds, until fragrant. Do not let grains brown.
  • Add the warm liquid and lime juice, stir thoroughly, scraping down any grains that are clinging to the side of the pan.
  • Cover and cook over the lowest heat for 15 minutes--temperature should be low enough that only the slightest hint of steam escapes lid.
  • Remove pan from heat and let stand covered for 5 minutes.
  • Uncover and test a grain of rice: if still a little hard, re-cover pan and set over low heat for about 5 min.; if rice has absorbed all liquid and is completely dry, sprinkle on 2 tablespoons water before returning to heat.
  • When rice is done, sprinkle on parsley and gently fluff with fork to release steam and stop the cooking.

Tips:

  • Use ripe plantains: Look for plantains that are yellow with black spots. Avoid plantains that are too green or have too many blemishes.
  • Slice the plantains evenly: This will help them cook evenly. If the slices are too thick, they will not cook through. If they are too thin, they will be mushy.
  • Fry the plantains in hot oil: This will help them to brown and crisp up. If the oil is not hot enough, the plantains will absorb too much oil and become greasy.
  • Do not overcrowd the pan: When frying the plantains, do not overcrowd the pan. This will prevent them from cooking evenly.
  • Drain the plantains on paper towels: After frying the plantains, drain them on paper towels to remove any excess oil.
  • Serve the plantains hot: Arroz blanco con platanos fritos is best served hot. You can serve it as a main course or a side dish.

Conclusion:

Arroz blanco con platanos fritos is a delicious and easy-to-make dish that is perfect for any occasion. The combination of fluffy white rice, sweet fried plantains, and savory sofrito is sure to please everyone at your table. So next time you are looking for a new dish to try, give arroz blanco con platanos fritos a try. You won't be disappointed.
