Number Of Ingredients 8

2 heads of Roasted Garlic*
6 oz Frozen Artichoke Hearts
4 oz Cream Cheese
1/2 cup Plain Greek Yogurt
1/4 cup Mayonnaise
1/2 tsp Cracked Pepper
1½ cups Shredded Cheese Blend**
(I used a Parmesan, Asiago, Fontina & Mild Provolone cheese blend)

Steps:

  • First you will need to roast your garlic. See the How To Roast Garlic link below this recipe. Preheat oven to 350° Mash roasted garlic cloves with a fork until it becomes a thick paste. Thaw and drain the frozen artichoke hearts. Make sure you remove as much liquid as possible then chop artichokes into small pieces. Reserve 1/2 cup of the shredded cheese blend, put to the side. Mix all other ingredients together thoroughly and place into the desired baking dish. Top with the remaining 1/2 cup of shredded cheese. I also added a little more cracked pepper and an artichoke heart to garnish. Bake at 350 degrees for 25-30 minutes then broil for 3-5 minutes until the top is bubbly and brown.

ROASTED GARLIC, SPINACH AND ARTICHOKE DIP

Roasted Garlic, Spinach and Artichoke Dip image

This is my version of the ever-so-popular dip we've all had in restaurants. It's a bit lower in calories than the restaurant version and tastes just as good, if not better.

ROASTED GARLIC
1 small head of garlic
1 Tbsp olive oil
1/2 tsp coarse sea salt
1/4 tsp ground black pepper
ROASTED GARLIC, SPINACH, AND ARTICHOKE DIP
8 oz neufchatel cheese (reduced fat cream cheese)
1/3 c grated parmesan cheese
1/3 c reduced fat mozzarella cheese
1/3 c lite sour cream
1/3 c lite mayonnaise
10 oz frozen chopped spinach, thawed and squeezed dry
1 c canned artichoke hearts, drained
1 head of roasted garlic
1/4 tsp kosher salt
1/2-1 tsp hot sauce (optional)

Steps:

  • 1. To roast the garlic: Pre heat oven to 400 degrees. Place a baking sheet in the oven as it pre-heats. Remove some of the outer layers of garlic skin if they're plentiful. Cut the top off the head of the garlic and place in foil. Drizzle with olive oil and sprinkle with salt and pepper. Seal foil and place on baking sheet. Roast for 30-40 minutes. Allow to cool before using. When cool, squeeze the roasted cloves (discard the skin) and set aside to use in the dip.
  • 2. To make the dip: Preheat oven to 350 degrees. Combine all ingredients. When well mixed, spread into baking dish. If you want more cheese, sprinkle Parmesan cheese on top. Bake 35 minutes. Serve with pita chips, grilled Italian bread or raw vegetables.

Tips:

  • To make the dip creamier, use full-fat cream cheese and sour cream.
  • If you don't have roasted garlic, you can use 1/4 cup of minced fresh garlic.
  • Use a variety of cheeses to create a more flavorful dip. Some good options include Parmesan, cheddar, and Gruyère.
  • Add some chopped fresh herbs, such as parsley, chives, or dill, to give the dip a pop of color and flavor.
  • Serve the dip with a variety of dippers, such as crackers, bread, or vegetables.

Conclusion:

This Artichoke and Roasted Garlic Dip is a delicious and easy-to-make appetizer that is perfect for any occasion. With its creamy texture, tangy flavor, and roasted garlic aroma, this dip is sure to be a hit with your guests. So next time you're looking for a quick and easy appetizer, give this recipe a try!
