3 artichoke hearts
1 clove garlic
3 tablespoons tahini sauce
2 tablespoons lemon juice

Steps:

I like to serve it with vegetable crudettes to make it even healthier, but you can also serve it with toasted pita bread or your favorite crackers. Tahini, ground sesame butter, used to be hard to find, but now it's getting more and more common at quality grocery stores. Drizzle hummus with good quality olive oil and garnish with fresh rosemary sprigs. A light sprinkle of feta cheese is delicious, too.

I thought that using hummus as a base was a brilliant way to veganize spinach-artichoke dip (one of my favorites), so I decided to make my own, chunkier version. Serve with Recipe #473753. 28 ounces chickpeas (drained, but liquid reserved)
2 garlic cloves
1/4 cup olive oil
1/3 cup tahini
1/2 lemon (juice of)
10 ounces frozen spinach (thawed, squeezed, and drained)
14 ounces artichoke hearts, quartered (drained)

Steps:

  • In a food processor, puree the chickpeas and garlic. Add the olive oil, tahini, and lemon juice, and process until smooth, adding more liquid (either the liquid from the can of chickpeas or some water) if necessary.
  • Add the spinach, and pulse a few times, until it is incorporated but not pureed.
  • Transfer to a bowl and stir in the artichoke hearts by hand.
  • Serve with fresh pita chips!

1 (15 ounce) can garbanzo beans, drained (chick-peas)
3 tablespoons tahini
2 tablespoons marinated artichoke hearts
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
3 tablespoons water
1 garlic clove, large, minced
1/2 teaspoon salt (or sea salt to taste)
2 tablespoons frozen spinach, chopped, thawed and drained well
1/4 teaspoon vinegar

Steps:

  • Mix all ingredients except for spinach in food processor or blender until smooth.
  • Stir finely chopped spinach into mixture.
  • This will thicken after refrigeration, and is good for at least 2 weeks in the refrigerator (I've never had any last beyond then!).
  • I serve with reduced-fat Triscuits for a high fiber lunch.

6 tablespoons tahini, stirred well

1 pinch cayenne

  • Chop 1/4 cup artichoke hearts and set aside for garnish.
  • Combine lemon juice and water in small bowl or measuring cup.
  • Whisk together tahini and 2 tablespoons olive oil in second small bowl or measuring cup.

  • With machine running, add oil-tahini mixture in steady stream through feed tube; continue to process until hummus is smooth and creamy, about 15 seconds, scraping down bowl as needed.

14 ounces artichoke hearts, drained and coarsely chopped
3 tablespoons olive oil

3 cloves garlic, crushed
1 tablespoon sesame seeds
¼ cup water
1 (10 ounce) bag chopped fresh spinach
2 (15 ounce) cans garbanzo beans, liquid reserved
1 (12 ounce) jar marinated artichoke hearts, drained and chopped
1 (7 ounce) jar roasted red peppers, drained and chopped

Steps:

  • Heat olive oil in a small skillet over medium heat. Stir in the garlic and sesame seeds; cook and stir until garlic is tender, 3 to 5 minutes. Remove from heat and set aside. Heat water in another skillet. Add spinach. Cook and stir until spinach is wilted, 3 to 5 minutes. Drain and set aside.
  • Place the garbanzo beans into a blender. Cover, and puree until smooth. Add the spinach, artichokes, and garlic mixture. Blend to desired consistency, pouring in reserved garbanzo bean liquid as needed. Spoon mixture into a bowl. Cover and refrigerate until chilled. Top with roasted red peppers before serving.

2 tablespoons chopped fresh basil
2 tablespoons lemon juice
2 (15 ounce) cans cannellini beans, drained (reserve juice)
1 tablespoon olive oil
1 tablespoon water
1 tablespoon tahini
½ teaspoon salt
½ teaspoon ground cumin
1 (15 ounce) can artichoke hearts, drained and quartered

  • Preheat oven to 350 degrees F (175 degrees C).
