Steps:
- For the flatbread: In a small mixing bowl, add the self-rising flour, yogurt, olive oil, rosemary and salt and mix. It might seem like the consistency is sticky, but this is okay!
- Dust a bench top with more of the flour and knead the dough until it forms a ball. If it's still sticky, add more flour to the bench. Roll out the dough with a rolling pin until 1/2 centimeter (1/4 inch) in thickness.
- Heat a small splash of olive oil in a small pan over medium heat. Once hot, transfer the flatbread over and cook until light brown, about 2 minutes. Then flip and cook on the other side for another minute. Serve topped with one of the pizza topping combinations.
SPINACH-ARTICHOKE FLATBREAD PIZZAS
Using flatbread as the foundation for these pizzas ensures a crispy crust that you can feel good about devouring. In this recipe, I finish the pizzas with a balsamic reduction: Balsamic vinegar cooked down to a sweet, gooey glaze to drizzle over your flatbread toppings. It's like the "icing on the pizza"!

- Meanwhile, lay out the flatbreads on the prepared baking sheets and coat with cooking spray. Bake for 5 to 6 minutes. Remove from the oven but leave the oven on.
- Spread 2 tablespoons Alfredo sauce evenly onto each flatbread. Top each with 1 cup spinach, 1/2 cup grape tomatoes, 1/4 cup artichokes, and 2 tablespoons mozzarella.
- Return to the oven and bake until the cheese is melted, 7 to 9 minutes. Remove from the oven and drizzle the balsamic reduction evenly over each pizza.

Steps:
- Preheat oven to 500 degrees. Lightly oil two 14-inch pizza pans. Set aside. In a medium skillet, heat 1/4 cup oil over high heat. Add artichokes, and cook, stirring, for about 1 minute. Add shallot, and cook, stirring, 1 minute more. Add wine and 1/2 cup water; bring to a boil. Cover, and lower heat to simmer. Cook until artichokes are tender when pierced with the tip of a knife, 8 to 9 minutes. Add marjoram, and stir to combine. Season with salt and pepper. Set aside.
- Divide dough in half. Cover one half with plastic wrap while working with the other. Working on a lightly floured surface, use fingers to flatten and stretch dough into a rough 8-inch circle. Transfer to one of the prepared pans or onto a pizza peel. Continue pressing dough outward until it just fits inside rim of pan or reaches almost to the edge of the stone. Dough should be less than 1/4 inch thick. Drizzle with olive oil. Repeat with remaining dough.
- Sprinkle each round with half the mozzarella. Transfer to oven, and bake for 10 minutes. Remove from oven. Divide artichokes evenly between pizzas, and sprinkle each with 2 tablespoons Parmesan. Return to oven until crusty and golden, 10 to 15 minutes more. Serve immediately.

Tips:
- Choose the right artichokes. Look for artichokes that are firm and heavy for their size, with tightly closed leaves. Avoid artichokes that have brown or wilted leaves, or that feel soft when squeezed.
- Prepare the artichokes properly. To prepare artichokes, first trim the stem and remove the tough outer leaves. Then, cut the artichoke in half lengthwise and scoop out the fuzzy choke from the center. You can then steam, boil, or roast the artichokes, depending on your recipe.
- Use high-quality ingredients. The better the ingredients you use, the better your flatbread pizzas will be. Look for fresh, flavorful ingredients, such as ripe tomatoes, creamy mozzarella cheese, and thinly sliced mortadella.
- Don't overcrowd the flatbread pizzas. When assembling the flatbread pizzas, be sure to leave some space between the toppings. This will allow the pizzas to cook evenly and prevent the toppings from becoming soggy.
- Cook the flatbread pizzas over high heat. This will help to create a crispy crust and prevent the pizzas from becoming soggy. If you are using a grill, preheat it to high heat before cooking the pizzas.
Conclusion:
Artichoke mortadella flatbread pizzas are a delicious and easy-to-make appetizer or snack. They are perfect for parties or casual gatherings. With a few simple tips, you can make sure that your flatbread pizzas turn out perfectly every time. So next time you are looking for a quick and easy meal, give these artichoke mortadella flatbread pizzas a try. You won't be disappointed!
