1 can (6 ounces) light water-packed tuna, drained and flaked
1/3 cup coarsely chopped water-packed artichoke hearts, rinsed and drained
2 tablespoons mayonnaise
1/2 cup shredded Mexican cheese blend, divided
1/4 teaspoon lemon-pepper seasoning
1/8 teaspoon dried oregano
2 English muffins, split and toasted

Steps:

  • Preheat broiler. In a small bowl, combine the tuna, artichokes, mayonnaise, 1/4 cup cheese, lemon pepper and oregano. Spread over English muffin halves. , Place on a baking sheet. 1 tablespoon olive oil
1 garlic clove, halved
3/4 cup mayonnaise

1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped

1 (6 ounce) can tuna in water, water reserved
1 cup frozen artichoke heart, quarters
3 tablespoons light mayonnaise
1/2 teaspoon garlic salt
1 tablespoon dill pickle relish
1/8 teaspoon ground black pepper
6 slices cheese, any kind
3 whole wheat English muffins, split

Steps:

  • In food processor, add the artichokes, mayonnaise, tuna water, relish, pepper and garlic salt. Blend until artichokes are finely shredded.
