GRILLED CHICKEN WITH ARUGULA SALAD
When my husband first found out he had diabetes, I was challenged to start cooking old family favorites in new, healthy ways that he would love just as much. This was the first one that made him say, "I can eat like this all the time!" Shiitake and oyster are some of my favorite mushrooms to use. -Lynne Keast, Monte Sereno, California

Steps:
- Preheat oven to 400°F. Combine fennel wedges, thyme, and 4 tablespoons oil in large bowl; toss to coat. Arrange fennel, cut side down, on large rimmed baking sheet. Sprinkle with salt and pepper. Roast until fennel is tender and brown, turning once, about 40 minutes. Discard thyme sprigs. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
- Whisk vinegar, mustard, and 2 tablespoons oil in large bowl. Season dressing with salt and pepper. Add fennel, orange slices, and arugula. Toss to coat. Transfer salad to large shallow bowl.
- What to drink:
- To accompany the spicy, citrusy salad, pour a crisp white with mineral notes. The Kupelwieser 2008 Pinot Grigio Alto Adige ($15) would be perfect.
Tips:
- Choose fresh and tender arugula: Look for leaves that are vibrantly green and crisp. Avoid any wilted or yellowed leaves.
- Use high-quality olive oil: Extra virgin olive oil is the best choice for this salad, as it has a rich flavor and aroma. If you don't have extra virgin olive oil, you can use a good quality regular olive oil.
- Don't overcook the chicken: Grilled chicken is best when it is cooked to an internal temperature of 165 degrees Fahrenheit. Overcooked chicken will be dry and tough.
- Use a variety of toppings: This salad is a great opportunity to use up leftover vegetables or nuts. Some good options include roasted red peppers, sun-dried tomatoes, crumbled feta cheese, or chopped walnuts.
- Make the dressing ahead of time: This dressing can be made up to 3 days in advance and stored in the refrigerator. This will save you time when you're ready to assemble the salad.
Conclusion:
Arugula salad with grilled chicken and fennel is a light and refreshing salad that is perfect for a summer meal. The arugula is peppery and slightly bitter, while the grilled chicken is tender and juicy. The fennel adds a sweet and anise-like flavor to the salad. This salad is also very easy to make, and it can be on the table in less than 30 minutes. So next time you're looking for a quick and healthy meal, give this arugula salad with grilled chicken and fennel a try.
