SAUCY ASIAN BOK CHOY

Saucy Asian Bok Choy image

I don't know much at all about cooking with Asian flavors, so I really got lucky with this creation. Try out different greens or a mixture with other vegetables (I bet broccoli and cauliflower would be good) but I love it with bok choy!

Provided by White Rose Child

Categories     Greens

Time 15m

Yield 2 serving(s)

Number Of Ingredients 8

1/2 teaspoon ground ginger
1/2-1 teaspoon fresh ginger, grated (a full teaspoon will make it pretty hot)
3/4 teaspoon tamari
1 tablespoon no-added-salt tomato paste
1/2 teaspoon vegetable oil
1 large garlic clove, chopped
1/3 cup vegetable broth
4 cups bok choy, chopped (including the white parts, chop them finely)

Steps:

  • Combine all 7 first ingredients, for the sauce, in a small pot and bring to a simmer.
  • Add white parts of the bok choy and cook on medium-low, covered, about 5 minutes, till softened.
  • Add the green parts of bok choy and let cook 3-5 minutes more. Stir, remove from the heat, cover and let the greens soften further for 3-5 minutes.
  • Dish it up and spoon some of the sauce over each serving. This is also quite good as leftovers served cold.

Salmon With Bok Choy, Asian Sauce and Salmon Roe image

Make and share this Salmon With Bok Choy, Asian Sauce and Salmon Roe recipe from Food.com.

Provided by ImPat

Categories     Asian

Time 20m

Yield 4 serving(s)

Number Of Ingredients 13

4 (150 g) salmon fillets (skin on)
1 tablespoon vegetable oil
salt (to taste)
ground pepper (to taste)
1 bunch bok choy (tops trimmed, washed and quartered)
1 tablespoon garlic (minced)
1 tablespoon ginger (grated)
1 chili (red chopped to your taste)
1 tablespoon palm sugar
2 tablespoons fish sauce
2 tablespoons lime juice (about 1 lime)
2 tablespoons salmon roe (a small jar optional but wonderful)
coriander leaves (to serve)

Steps:

  • Place the salmon pieces on a plate and drizzle with the oil and season well.
  • Prepare the bok choy and steam in a bamboo steamer.
  • For the sauce combine the garlic, ginger, chilli, palm sugar, fish sauce and lime juice.
  • When ready to serve cook the salmon skin side down over a moderate heat until the skin is welll coloured and then turn it over and cook the other side for a minute, leaving it rare in the middle or cook slightly longer if you prefer.
  • To serve, place a bed of bok choy on each plate and top with the salmon and roe.
  • Drizzle over the sauce.
  • Steamed rice would be a great accompaniment to soak up those delicious juices.
  • Garnish with the coriander leaves.

Tips:

  • Choose the right bok choy: Look for baby bok choy with tightly packed, deep green leaves and crisp white stalks.
  • Wash bok choy thoroughly: Separate the leaves and rinse them under cold water to remove any dirt or debris.
  • Trim the bok choy: Cut off the root end and any wilted or discolored leaves.
  • Use a variety of cooking methods: Bok choy can be stir-fried, sautéed, steamed, or braised. Each method produces a different texture and flavor.
  • Don't overcook bok choy: Overcooked bok choy will become limp and lose its flavor. Cook it just until it is tender-crisp.
  • Add bok choy to your favorite dishes: Bok choy is a versatile vegetable that can be added to soups, salads, stir-fries, and more.

Conclusion:

Bok choy is a delicious and nutritious vegetable that is easy to cook. With its mild flavor and crunchy texture, it is a great addition to a variety of dishes. Whether you are stir-frying, sautéing, steaming, or braising it, bok choy is sure to please. So next time you are looking for a healthy and flavorful vegetable to add to your meal, reach for bok choy.
