1/2 cup freshly squeezed orange juice
1 orange, zested (about 2 teaspoons)
1/2 cup smooth natural peanut butter
2 tablespoons packed dark brown sugar
1/4 cup light soy sauce
2 teaspoons peeled grated fresh ginger
4 medium cloves garlic, minced
1 teaspoon red pepper flakes
1 1/2 pounds boneless chicken thighs, cut into 1-inch wide strips
Oil, for grill grate
Skewers (soaked in water for 20 minutes if wooden)
1/4 cup roughly chopped fresh cilantro leaves, for serving
1/3 cup roughly chopped roasted, salted peanuts, for serving

Steps:

  • In a large bowl, whisk together the orange juice, orange zest, peanut butter, sugar, soy, ginger, garlic, and red pepper flakes until smooth and evenly combined. Reserve 1/3 cup of the mixture to serve as a dipping sauce. Put the marinade in a resalable plastic bag, add the chicken, seal the bag and turn to coat evenly. Refrigerate and allow to marinate for 30 minutes to 8 hours.
  • Heat a grill to medium heat, (350 degrees F), and rub the grate with a towel dipped in oil. Thread 1 to 2 chicken tenders on each skewer. Grill the chicken until thoroughly cooked, about 2 to 3 minutes per side. Transfer to a serving platter and sprinkle with cilantro and peanuts. Serve hot or at room temperature with the reserved peanut sauce.

I like this recipe because it came straight out of my head one day when I was bored and wanted something different. This goes great with fried rice either from the frozen food department or a homemade version and some snow peas with soy sauce or the asian chili sauce on the side.

Yield Makes 2 servings; can be doubled

Number Of Ingredients 6

1/4 cup hoisin sauce
1 tablespoon minced peeled fresh ginger
1 tablespoon oriental sesame oil
1 tablespoon unseasoned rice vinegar
2 skinless boneless chicken breast halves, cut into 1-inch pieces
1 tablespoon sesame seeds

Steps:

  • Prepare barbecue (medium-high heat). Whisk first 4 ingredients in medium bowl to blend. Place 2 tablespoons sauce in small bowl for glaze. Mix chicken into remaining sauce; let stand 10 minutes. Thread chicken onto 4 metal skewers, spacing pieces 1/2 inch apart. Sprinkle lightly with salt and pepper. Grill chicken until cooked through and slightly charred, brushing with glaze and turning often, about 8 minutes. Sprinkle with sesame seeds.

Tips:

  • If you don't have bamboo skewers, you can use metal skewers instead. Just be sure to soak them in water for 30 minutes before using to prevent them from burning.
  • For a more flavorful marinade, add a tablespoon of soy sauce, a tablespoon of rice vinegar, and a teaspoon of sesame oil.
  • If you don't have time to marinate the chicken for 30 minutes, you can cook it without marinating it. Just be sure to cook it over medium-high heat so that it doesn't dry out.
  • Serve the chicken skewers with your favorite dipping sauce, such as teriyaki sauce, sweet and sour sauce, or hoisin sauce.

Conclusion:

Asian ginger chicken skewers are a delicious and easy-to-make appetizer or main course. They are perfect for any occasion, from a casual get-together to a formal party. With just a few simple ingredients, you can create a dish that will impress your guests and leave them wanting more.
