Another (EASY) casserole to use those mushy canned green beans. A comfort-food casserole. Adapted and modified from a friend's recipe. Nothing Asian-authentic about it....but it does use soy sauce. ;)

2 (16 ounce) cans cut green beans, drained
1 (8 ounce) can bamboo shoots, drained
1 (8 ounce) can sliced water chestnuts, drained
1/4 cup chopped onion
1 tablespoon low sodium soy sauce
1 (10 3/4 ounce) can cream of celery soup
1/2 cup French fried onion rings, the canned French's

Steps:

  • Preheat oven to 350. Lightly grease/spray a casserole dish; set aside.
  • Mix together all ingredients EXCEPT the canned french-fried o-rings.
  • Pour into the prepared casserole dish.
  • Bake at 350 for 30 minutes.
  • Sprinkle with the canned french-fried onions.
  • Bake an additional 5-7 minutes until the french fried onions are golden brown.

A new twist on an old favorite. I don't generally care for the cream of whatever versions, so for RSC #15, I developed my own version with an Asian flair inspired by the panko bread crumbs in the ingredient list. Full of flavor & fresh ingredients!

2 tablespoons butter
1 medium onion, chopped
1/4 cup fresh ginger, minced
4 ounces cream cheese, softened
1 head roasted garlic
1 lemon, zest of
1 1/2 cups sour cream
2 tablespoons soy sauce
2 teaspoons toasted sesame oil
1 lb green beans, cooked until tender-crisp
1/3 cup panko breadcrumbs (bread crumbs)
2 tablespoons toasted sesame seeds

Steps:

  • Preheat oven to 450°F.
  • Melt butter in small saucepan. Add chopped onion & ginger. Saute until softened. Remove from heat & add cream cheese through sesame oil. Combine thoroughly.
  • In a large bowl, combine sauce with cooked green beans. Pour into a small casserole dish.
  • Top with panko bread crumbs & sesame seeds.
  • Bake until bubbly, about 15 minutes.
