Number Of Ingredients 9

3 Tbsp dark sesame oil
6 thick shoulder-cut lamb chops, trimmed of excess fat
3/4 c finely chopped yellow onion
3 clove garlic,peeled and minced
3 Tbsp soy sauce
3 Tbsp chile paste
3/4 c tart orange marmalade
1 1/2 Tbsp rice wine vinegar
1 Tbsp minced fresh ginger

Steps:

  • 1. Heat the sesame oil in a large skillet over medium heat. Add the chops and brown them lightly on both sides. Transfer the chops to paper towels to drain.
  • 2. Add the onion and garlic and cook, covered over low heat until tender and lightly colored, 20 minutes.
  • 3. Add the soy sauce, chili paste, marmalade, vinegar and ginger. Simmer for 2 minutes, stirring constantly.
  • 4. Return the chops to the skillet, cover, and cook over low heat, turning once, until done, about 7 minutes. Serve immediately, spooning the sauce over the chops.

Tips:

  • Choose the right lamb chops: Look for chops that are 1 to 1 1/2 inches thick and have a good amount of marbling. This will help ensure that they stay juicy and flavorful during cooking.
  • Marinate the lamb chops: Marinating the lamb chops in a flavorful marinade will help to tenderize them and infuse them with flavor. You can use a variety of marinades, such as a simple olive oil and herb marinade, a yogurt-based marinade, or a spicy marinade made with chili peppers and garlic.
  • Cook the lamb chops over high heat: This will help to sear the outside of the chops and create a nice crust, while keeping the inside juicy and tender. You can cook the lamb chops in a skillet, on a grill, or under a broiler.
  • Let the lamb chops rest before serving: This will allow the juices to redistribute throughout the chops, resulting in a more tender and flavorful bite.

By following these tips, you can create perfectly cooked lamb chops that are sure to impress your friends and family.
