1 large carrot, shredded

2 tablespoons vegetable oil
1 teaspoon dark sesame oil
3 tablespoons seasoned rice vinegar (or plain rice vinegar with a teaspoon of sugar)
Salt and black pepper to taste
2 tablespoons chopped cilantro
1 whole green onion, chopped

2 green onions, chopped
1/2 cup fried rice noodles
1/4 cup slivered almonds, toasted
