ASIAN STYLE TURKEY SALAD

Time 30m

Yield 2 servings

Number Of Ingredients 10

2 cups leftover roast turkey
1 tablespoon light soy sauce
1 tablespoon dry sherry or Mirin
1 tablespoon each vegetable and Oriental sesame oil
Quarter size fresh ginger, minced
2 green onions, thinly sliced
Salt and freshly ground black pepper
1 head Belgian endive, separated into spears
1/4 cup finely diced red bell pepper
2 tablespoons chopped cilantro or peanuts

Steps:

  • Cut the turkey into small cubes, making sure to remove all fat and skin. Make a dressing of the soy sauce, sherry, oils and ginger and toss with the turkey and green onions. Season to taste with salt and pepper
  • Center the salad on a plate and surround with endive spears. Garnish the salad with red pepper and cilantro or peanuts.

Tips:

  • When choosing an avocado, look for one that is ripe but not mushy. You can tell if an avocado is ripe by gently pressing on the skin. If it gives to gentle pressure, it is ripe. If it is too hard, it is not ripe enough. If it is too soft, it is overripe.
  • To easily peel an avocado, cut it in half lengthwise and twist the two halves apart. Then, use a spoon to scoop out the pit. You can also use a sharp knife to carefully slice the avocado around the pit and then scoop out the two halves.
  • If you are not using the avocado right away, you can store it in the refrigerator for up to 3 days. To prevent the avocado from browning, brush it with lemon juice or lime juice.
  • When making the dressing, be sure to whisk the ingredients together until they are well combined. This will help the flavors to blend together.
  • If you don't have any rice vinegar on hand, you can substitute white vinegar or apple cider vinegar.
  • Serve the turkey salad immediately, or store it in the refrigerator for up to 3 days.

Conclusion:

This Asian-style turkey salad is a delicious and healthy way to use up leftover turkey. It is packed with flavor and nutrients, and it is easy to make. You can serve it on a bed of lettuce, or you can wrap it in tortillas or lettuce wraps. It is also a great option for a packed lunch or a light dinner.
