This is a light and lovely salad dressing that lends itself well to a simple and elegant salad. I love to use it on a salad of butter lettuce, arugula, goat cheese, and caramelized pecans - simply delicious!

PEAR & WALNUT SALAD WITH BALSAMIC VINAIGRETTE

Pear & Walnut Salad With Balsamic Vinaigrette image

I came up with this salad recipe for Father's Day, and it was a huge hit. I strongly recommend recipe #154351 and recipe #323254 in this!! (I used both walnuts and pecans when making the candied nuts.) It's really pretty if you can get yellow pear tomatoes and use a red pepper, or vise versa.

Make and share this Candied Walnut, Pear, and Gorgonzola Salad recipe from Food.com.

Provided by Miss Annie

Categories     Cheese

Time 20m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 1/2 cups walnut halves
1/2 cup brown sugar
2 tablespoons butter
2 tablespoons water
3/4 cup gorgonzola, crumbled
1 head butter lettuce, torn (you may use any mix you prefer)
3 pears, cored and cubed (I use Barlett)
4 tablespoons olive oil
2 tablespoons balsamic vinegar
pepper, freshly cracked

Steps:

  • In a small sauce pan, combine the sugar, butter and water over low heat.
  • Cook until sugar is just melted.
  • Pour mixture over walnuts on waxed paper to cool.
  • Mix olive oil and vinegar.
  • In salad bowl, toss lettuce, gorgonzola, cooled walnuts and pears with olive oil and vinegar.
  • Season with cracked pepper and serve on individual salad plates.

Tips:

  • Select ripe pears: Use ripe but firm pears for the best texture and flavor. Avoid pears that are too soft or bruised.
  • Make the candied walnuts ahead of time: The candied walnuts can be made up to 2 days in advance. This will save you time when assembling the salad.
  • Use good quality balsamic vinegar: The balsamic vinegar is a key ingredient in the dressing, so make sure to use a good quality one. Look for a balsamic vinegar that is aged for at least 12 years.
  • Serve the salad immediately: The salad is best served immediately after it is assembled. The pears will start to brown if they sit for too long.

Conclusion:

This autumn pear salad is a delicious and refreshing way to enjoy the flavors of fall. The sweet pears, crunchy walnuts, and tangy dressing come together to create a perfect balance of flavors. This salad is sure to be a hit at your next gathering.
