Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

1 tablespoon butter or 1 tablespoon margarine
1 cup sliced celery
2 tablespoons dry white wine
1/2 teaspoon dried sage
1 (15 ounce) can pumpkin
1/2 cup chopped yellow onion
4 cups chicken stock or 4 cups broth
1 teaspoon salt
1/4 teaspoon dried thyme
1/2 green apple, peeled cored, and chopped
fresh parmesan cheese

Steps:

  • In a soup pot over medium heat, melt butter.
  • Add onion and celery and saute until tender, about 5 minutes.
  • Add 1 cup of the stock and simmer, covered, for 10 minutes.
  • Transfer to a blender in batches and puree until smooth.
  • Return to pot and add the remaining three cups of stock, wine, sage, salt, thyme, and pumpkin.
  • Simmer until flavors are blended, about10 minutes.
  • Ladle into bowls, top with a few apple pieces and sprinkle with parmesan.

Tips:

  • Choose the right pumpkin. Look for a sugar pumpkin or a pie pumpkin, which are both sweet and flavorful. Avoid using a carving pumpkin, which is less flavorful and has a stringier texture.
  • Roast the pumpkin before using it in the soup. Roasting the pumpkin brings out its natural sweetness and flavor. You can roast the pumpkin in a 400°F oven for about 45 minutes, or until it is tender.
  • Use a good quality vegetable broth. The broth is the base of the soup, so it's important to use a good quality broth. You can use store-bought broth, or you can make your own vegetable broth at home.
  • Add your favorite spices. Pumpkin soup is a great way to use up fall spices like cinnamon, nutmeg, and ginger. You can also add other spices like cumin, coriander, and paprika.
  • Puree the soup until it is smooth. You can use an immersion blender or a regular blender to puree the soup. If you are using a regular blender, be sure to work in batches.
  • Garnish the soup with your favorite toppings. Some popular toppings for pumpkin soup include whipped cream, sour cream, croutons, and chopped nuts.

Conclusion:

Pumpkin soup is a delicious and easy-to-make soup that is perfect for fall. It is a great way to use up leftover pumpkin, and it is also a healthy and nutritious meal. With a few simple ingredients and a little bit of time, you can make a delicious pot of pumpkin soup that your whole family will enjoy.
