1 medium to large butternut squash (about 2 cups cooked pulp)
1 large Spanish onion, chopped (about 3 cups)
2 tablespoons vegetable oil
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon dried thyme
2 bay leaves
1 medium carrot, diced
2 celery stalks, chopped
1 1/2 cups water
11/2 cups tomato juice
1 cup apple juice
1 cup orange juice
Salt and ground black pepper

Steps:

  • Bake or boil the squash. To bake, halve the squash and scoop out the seeds. Place the squash halves cut side down on an oiled baking sheet and cover loosely with aluminum foil. Bake at 350 degrees until tender, about one hour. Scoop out the pulp and discard the skin. To boil, peel the squash, halve it, and scoop out the seeds. Cut it into chunks and place them in a saucepan with water to cover. Bring the water to a boil and cook until the squash is tender, about 15 minutes. Drain and reserve the liquid.
  • Meanwhile, saute the chopped onion in the oil with the nutmeg, cinnamon, thyme, and bay leaves until the onion is translucent. Add the diced carrot and celery and the water (if you boiled the squash, use the reserved liquid). Cover and simmer until the carrots are Tender. Remove the bay leaves.
  • In a blender or food processor, puree the cooked squash, the onioncarrot mixture, and the juices in batches. Gently reheat the soup. Add salt and pepper to taste.

If you've never tried a butternut squash soup or pumpkin soup, then you're missing out...especially if you're a lover of sweets. Squash soup is one of my favorite things to eat in the fall and winter. When cooked, winter squashes turn soft and sweet, making them extremely versatile and comforting to eat when the weather is cool. Winter squashes like acorn and butternut squash can be hard to cut, so I like to slice them in half vertically, bake them, and then scoop out the flesh to use in a recipe. This way I don't have to kill my arm trying to cut up the squash when it's still hard as a rock.

2 acorn squash
1 medium butternut squash
1 large yellow onion
3 garlic cloves
2 jalapenos
1 (12 ounce) can coconut milk
1 tablespoon fresh sage
1 tablespoon fresh thyme
2 tablespoons extra virgin olive oil
1 quart vegetable stock
1/4 cup maple syrup (optional)
salt & pepper

Steps:

  • Cut the squashes in half vertically and arrange them face-up on a sheet pan. Drizzle 1 tablespoon of olive oil on top of the squash and bake in the oven at 400 degrees for about an hour. Remove the squash when it's tender and soft. Set aside to cool.
  • Chop up the onion, garlic, and jalapeño and put them in a big soup pot with the other tablespoon of olive oil over medium heat. Saute for about 10 minutes until the vegetables begin to soften, stirring frequently. Add in the vegetable stock, coconut milk, and a sprinkle of salt and pepper. Chop up the sage and thyme and add it to the pot and stir. Remove the squashes from their skins by either scooping out the flesh or cutting into big moons and slicing like a cantaloupe. Drop the cooked squash into the soup. Pour in the maple syrup (optional) and stir.
  • Puree the soup with an immersion blender or with your food processor or blender. When the soup is smooth, it's ready to eat. Adjust seasonings to your taste.
  • Tip 1: Try adding a little curry powder to this recipe for an extra kick of flavor. I love curry seasonings in squash soup, and I bet it would be a nice addition if you're a curry lover.
  • Tip 2: This makes a pretty thick soup. If you like it a little thinner, you can always increase the amount of vegetable stock in the recipe.

  • Bake in the preheated oven until squash is fork tender, yet still holds its shape, 30 to 40 minutes. Remove from the oven and lower heat to 350 degrees F (175 degrees C).

2 medium acorn squash
1/2 pound ground turkey
1 egg
1/2 cup cooked wild rice
1/2 cup chopped peeled tart apple
1/2 cup chopped fresh or frozen cranberries
1/4 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon dried parsley flakes
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom

Steps:

  • Cut squash in half and discard seeds; set squash aside. In a skillet over medium heat, cook turkey until no longer pink; drain. Add egg, rice,apple, cranberries, celery, salt, parsley, allspice and cardamom. Spoon into squash halves; place in an ungreased 13-in. x 9-in. baking dish. Fill dish with hot water to a depth of 1/2 in. Cover and bake at 350° for 25 minutes. Uncover; bake 20-25 minutes longer or until the squash is tender.

1 butternut squash
2-3 tablespoons butter
1 small red onion, chopped
2 garlic cloves, chopped
3-4 cups water (vegetable or chicken broth optional)
1 bay leaf
2-4 whole peppercorns, crushed
1/2 teaspoon coarse salt, or to taste
3 celery stalks, sliced
3 carrots peeled and sliced
1 red bell pepper, chopped
optional:
Serve with Cilantro Cashew 'Creme' (separate recipe)

Creme fraiche/half & half

Steps:

  • Preheat oven 400 degrees. Wash butternut squash. Wrap in foil. Place squash in baking dish large enough to catch juices that may seep out while baking. Bake squash for about 40-50 min., depending on how big the squash is. Use a toothpick after 40 min., every 10 min. to test the firmness of the center of the squash. The toothpick should go in easily, without pushing too hard. If you feel resistance, add another 10 min. baking time and try the toothpick test again in 10 min. (This step can be done a day ahead of time.) Wait for squash to cool. Slice butternut squash in half. Spoon out seeds and seed pulp and discard. Using a serrated tool or a spoon, scoop out the 'meat' of the squash and place aside in a bowl. Heat a thick bottomed pot under medium high heat. Add butter. Once butter has melted, add onions. After about 2 min. add garlic and stir with a wooden spoon. Once the onion and garlic have browned a bit, add 1 to 2 cups of water (or broth). Keep water simmering. Add celery, carrots and stir. Add pepper and salt and stire. Add another cup of water so as to cover the vegetables. If at any time the pot gets too dry, add another cup of water (or broth). There should always be water boiling. After 5 min. add bell pepper and stir. After another 5 min. add the butternut squash 'meat' that was set aside earlier. Stir well. If too thick, add more water (or broth) to create the thickness you desire. (If you will be serving it with cream or soy milk, leave the soup a bit on the thick side so as to thin with the cream.) Set aside to cool. With a food processor (or blender) puree the soup. Add a little water (or broth) if too thick to blend. The soup can be stored in the refridgerator to be reheated at a later time. Or you can server immediately at room temperature! If reheating, use same thick bottomed pot.

1/2 c rolled oats
1/2 cupchopped pecans

Steps:

  • 1.Preheat an oven to 350 degrees F (175 degrees C). 2.Place the squash pieces in a saucepan and cover with water. Bring to a boil and cook until the squash is tender, about 15 minutes. Drain; then mash the squash with 1/4 cup butter, 1 tablespoon brown sugar, salt, and white pepper. 3.Heat the 1 1/2 tablespoons butter in a large skillet over low heat; stir in sliced apples and sprinkle with the white sugar. Cover and cook over low heat until barely tender, about 5 minutes, stirring occasionally. Spread the apples in a 3-quart casserole. Spoon the mashed squash evenly over the apples. 4.Stir together the flour and rolled oats, pecans, the 1/2 cup brown sugar, and melted butter. Sprinkle the cornflake mixture evenly over the squash. 5.Bake in the preheated oven until heated through, about 15 minutes.

POLENTA WITH AUTUMN SQUASH AND PANCETTA

7 cups water
Kosher salt
1½ cups coarsely ground cornmeal
Freshly ground black pepper
2 tablespoons unsalted butter
1 teaspoon fresh thyme leaves
4 ounces freshly grated Parmesan cheese
4 tablespoons extra-virgin olive oil
1 small autumn squash (about 1 pound), peeled, seeded and shaved
1 red pepper, diced
4 ounces pancetta, diced
3 scallions, white parts only, chopped
¼ cup fresh mint leaves, thinly sliced
¼ cup fresh basil leaves, thinly sliced
2 tablespoons pomegranate molasse

Steps:

  • 1. Bring 7 cups salted water to a boil in a heavy medium saucepan over high heat. Gradually whisk cornmeal into boiling water. Let return to a boil, then reduce heat to low and cook, stirring frequently, until very thick and shiny, about 40 minutes. Monitor pot so mixture doesn't boil over, decreasing heat if necessary. Add more water, 1 tablespoon at a time, if necessary. Season with pepper and then stir in butter, thyme and half of Parmesan. Taste and add salt if necessary. 2. Preheat broiler and set rack about 7 inches below flame. Grease an 18- by 13-inch shallow roasting pan with 1 tablespoon oil. Spread hot polenta out into pan. Let cool 10 minutes. 3. Meanwhile, in a small bowl, toss squash, red peppers and scallions with salt, pepper and 2 tablespoons oil. Set aside. 4. Top cooled polenta with pancetta. Place pan under broiler and cook until pancetta starts to crisp, 4-5 minutes. Remove from broiler and evenly distribute squash-red pepper mixture over polenta. Return pan to broiler and cook until vegetables are tender and start to brown, 5-6 minutes more. (The squash will brown the quickest because it has so much sugar in it, but a little char on the edges adds texture and flavor.) 5. Remove polenta from broiler and top with remaining cheese, mint and basil. Drizzle with pomegranate molasses and remaining oil. Serve warm with a green salad.

Tips:

  • For the best flavor, use fresh, ripe squash. Look for squash that is heavy for its size, with smooth, unblemished skin.
  • To easily remove the squash seeds, cut the squash in half lengthwise and scoop out the seeds with a spoon.
  • Butternut squash can be roasted, baked, or steamed. Acorn squash is best roasted or baked.
  • To roast squash, preheat the oven to 400 degrees Fahrenheit. Toss the squash with olive oil, salt, and pepper, and roast for 30-40 minutes, or until tender.
  • To bake squash, preheat the oven to 375 degrees Fahrenheit. Place the squash in a baking dish with a little water, and bake for 45-60 minutes, or until tender.
  • To steam squash, place the squash in a steamer basket over a pot of boiling water. Cover and steam for 15-20 minutes, or until tender.
