4 quarts low-sodium chicken stock
4 boneless, skinless chicken breasts
1 cup orzo or rice
3 large eggs, separated
1 tablespoon lemon zest plus 1/2 to 1 cup fresh lemon juice
Kosher salt and freshly cracked black pepper
Chopped fresh parsley, for garnish

Steps:

  • In a large stockpot, bring the chicken stock to a boil. Add the chicken breasts and then lower to a simmer. Simmer until the chicken is just cooked through and the internal temperature registers 160 degrees F, 15 to 20 minutes; remove to a bowl. Once cooled, shred the chicken and reserve.
  • Add the orzo or rice to the pot with the chicken stock and cook until al dente, 5 to 8 minutes.
  • In a large bowl, whisk the egg whites to soft peaks. In a medium bowl, whisk together the egg yolks and most of the lemon juice, reserving some to add later as needed. Fold the egg yolk mixture into the egg whites. Once combined, ladle in some hot stock to temper the egg mixture, whisking constantly and adding the hot liquid slowly. Very slowly, add the warm whipped egg/lemon mixture into the pot, whisking constantly to prevent any curds or clumps from forming. Continue to cook over medium-low to medium heat, whisking, until the soup thickens, about 10 minutes more.
  • Add the shredded chicken and any reserved juices to the soup. Add the lemon zest and season with salt and plenty of freshly cracked black pepper. Taste and add additional lemon juice if needed. Garnish with chopped parsley.

  • Bring broth to boil in saucepan, and add rice or orzo.

1 (3 pound) whole chicken
½ cup uncooked white rice
salt and freshly ground black pepper to taste
3 egg, beaten

  • Rinse the chicken and remove any organs that may be inside. Place in a pot large enough for the chicken to move around, but not too much room or the broth will be watery. Add the chicken neck if that is included with your chicken. Fill with enough water to cover by about 1 inch. Cover and bring to a boil. When boiling, reduce heat to low and simmer for 45 minutes to 1 hour, skimming the fat from the top as it collects.
  • When the chicken is done, the meat should pull from the bones easily. Transfer the bird to a large bowl and set aside to cool. Add the rice, and season the broth with salt and pepper. Simmer over low heat for 20 more minutes, or until rice is tender.
  • Whisk the eggs with the lemon juice in a bowl. When the rice is done, turn off the heat. Whisk one ladle full of hot broth into the eggs slowly so the eggs do not curdle. Gradually whisk in more broth until the egg mixture is heated. Then pour the egg mixture back into the pot, whisking briskly. The result should be a creamy, cloudy looking soup. You may season with additional salt, pepper or lemon juice at this point.
  • You may add pieces of chicken to the soup before serving or serve soup with salted chicken on the side.

1 (3 pound) whole chicken
2 teaspoons salt, or more to taste
1 onion, chopped
2 ribs celery, chopped
1 carrot, chopped
2 bay leaves

2 tablespoons olive oil
1 onion, finely diced
2 bay leaves
1 carrot, peeled and quartered
1 leek, cleaned and quartered
2/3 cup arborio rice
1/2 cup fresh lemon juice
2 large eggs

1 teaspoon ground pepper

Steps:

  • Place the chicken in a large pot and add enough water to cover the chicken. Bring to a boil and reduce the heat to low, skimming when necessary.
  • Heat the oil in a separate pan over medium heat and add the onions. Cook the onions until clear, about 5 minutes. Set aside.

12 (3-inch) strips lemon zest plus 6 tablespoons juice, plus extra juice for seasoning (3 lemons)
2 sprigs fresh dill, plus 2 teaspoons chopped
2 teaspoons coriander seeds
1 teaspoon black peppercorns
1 garlic clove, peeled and smashed
8 cups chicken broth
1 cup long-grain rice
2 large eggs plus 2 large yolks

Steps:

  • If you have homemade chicken broth such as our Classic Chicken Broth, we recommend using it in this recipe, as it gives the soup the best flavor and body. Our preferred commercial chicken broth is Swanson Chicken Stock. Use a vegetable peeler to remove strips of zest from the lemons. Cut each chicken breast in half lengthwise. Toss with 1 3/4 teaspoons salt and let stand at room temperature for at least 15 minutes or up to 30 minutes. Cut 8-inch square of triple-thickness cheesecloth. 1 1/3 cups finely chopped onion
1 cup thinly sliced celery
2 tablespoons unsalted butter
3 pounds asparagus, trimmed and cut into 1-inch pieces, reserving about 30 tips for garnish
4 cups chicken broth
2 cups water
3 large eggs
1/4 cup fresh lemon juice plus additional to taste if desired
3 tablespoons minced fresh dill
dill sprigs for garnish

Steps:

  • In a large heavy saucepan cook the leek, the onion, and the celery with salt and pepper to taste in the butter over moderate heat, stirring, until the vegetables are softened, add the asparagus pieces, the broth, and the water, and simmer the mixture, covered for 10 to 15 minutes, or until the asparagus is tender. Purée the soup in batches in a blender or food processor until it is smooth, transferring it as it is puréed to another large heavy saucepan, and let it cool to lukewarm.
  • In a saucepan of boiling water cook the reserved asparagus tips for 3 to 4 minutes, or until they are tender, and transfer them with a slotted spoon to a bowl of ice and cold water to stop the cooking. Drain the asparagus tips and reserve them.

Cook the soup over moderately low heat, whisking and being careful not to let it boil, until it is thickened slightly and registers 160°F. on a candy thermometer and whisk in the minced dill, the additional lemon juice, and salt and pepper to taste. (The soup may be prepared up to this point 1 day in advance and kept covered and chilled. To reheat the soup, cook it over low heat, stirring, until it is hot, being careful not to let it boil.) 3 tablespoons nutritional yeast flakes (optional)

1/4 teaspoon turmeric
1/3 cup finely chopped chicken-style seitan (homemade or storebought)
2 tablespoons vegan margarine or 2 tablespoons extra virgin olive oil
1/4-1/3 cup fresh lemon juice (use 1/4, then test for tartness, and add more if necessary)
1 small lemons, zest of or 1/2 large lemon, zest of
1/4 cup chopped fresh parsley
salt and pepper (about 1/2 to 1 tsp of salt, and 1/4 to 1/2 tsp of pepper)

Steps:

  • Add vegetable broth, rice, nutritional yeast, and tamari (if using) to medium stockpot. Bring to a boil, and then lower heat, cover, and simmer for 25 minutes, until rice is cooked.
  • Meanwhile, in a small bowl, mix the soymilk, cornstarch, and tumeric with a fork or whisk and set aside.
  • When 25 minutes is up, re-stir the soymilk mixture, and add to soup. Stir well, until thickened.

2 cups milk
2 tablespoons cornstarch
6 egg yolks
8 cups chicken stock
1/2 cup orzo pasta
1/4 cup butter
1/2 cup fresh lemon juice

  • Combine milk, corn starch, egg yolks. Set aside.
  • Boil the chicken stock in a large soup pot (4 quart is good). Once the stock is boiling, add the orzo pasta and let it cook covered for 9-12 minutes (until pasta is tender).
  • When pasta is tender, remove the pot from the heat and add the egg mixture and butter. Stir slowly until it all blends together.

1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups milk
½ cup uncooked white rice
1 cup water
2 fluid ounces lemon juice

Steps:

  • In a medium sauce pan combine soup and milk. Heat through while whisking.
  • In a small sauce pan boil 1 cup water and uncooked rice. Reduce heat and simmer 20 minutes, or until tender.
  • Add rice to soup and cook until heated through. Add lemon juice in small increments until a subtle lemon taste develops. Serve warm.

6 cups chicken stock (48 ounces)
1 cup orzo
Salt and pepper
2 eggs, separated
Juice of 2 lemons
Chopped parsley, for garnish

Steps:

  • In a large saucepan bring stock to a boil over high heat. Taste for seasoning, add salt and pepper as needed, and stir in orzo. Bring to a boil, cover and reduce heat to simmering. Cook until orzo is tender, about 10 minutes. In a bowl whisk egg whites to soft peaks, then beat in yolks. Mixture should be frothy. Stir in lemon juice until just combined. Slowly stream 2 ladlefuls of hot stock over egg mixture, whisking constantly. Slowly whisk egg mixture back into simmering stock, stirring until thickened. Do not let soup boil. Serve immediately, garnished with parsley.;

1 1/2 lbs leeks, thinly sliced
4 large celery ribs, chopped
2 tablespoons extra virgin olive oil
2 cups fresh chicken stock
1 lemon, juice of, to taste
2 eggs
salt
white pepper
fresh dill (optional)

Steps:

  • In a stock pot saute the leeks and celery in olive oil until softened. Add the chicken stock and simmer 20 minutes. Puree the mixture with an immersion blender.
  • Just before serving, beat the lemon juice and eggs together until light and frothy. Slowly beat a ladleful of hot soup into the egg and lemon mixture, stir well, then whisk back into the soup pot.
  • Stir the soup well to make sure the eggs are incorporated so that they do not curdle.
  • Adjust seasoning, add salt and pepper and serve warm. Garnish each serving with fresh dill if desired.

1 whole onion
avgolemono sauce
salt

Steps:

  • Place the chicken in a large stock pot and fill with enough water to cover it.
  • Bring to a boil and remove the foam.
  • At this point add the onion and salt and pepper to taste.
  • Once the chicken is boiled remove it and the onion from the pot.
  • Now add the rice or orzo to the broth and let it boil.
  • When the rice or orzo is ready, add the avgolemono sauce.

2 large chicken breasts
2 c white onions, roughly chopped
1 c carrots, peeled and roughly chopped
1 c celery, roughly chopped
1 tsp whole peppercorns (i always use mixed peppercorns)
1 large bay leaf
9 to 10 c low-sodium chicken broth, divided
1/2 tsp lemon zest
1 c arborio rice
3 large free-run eggs, room temperature
1/3 c freshly squeezed lemon juice, or to taste
freshly ground black pepper, to taste
ground himalayan sea salt, to taste
1 1/2 Tbsp fresh chopped parsley, for garnish

Steps:

  • 1. In a large saucepan over medium-high heat, add chicken, onions, carrots, celery, peppercorns, bay leaf and 4 cups broth. Bring to a boil, reduce the heat to medium and simmer for 25 minutes or until the internal temperature of chicken breasts reaches 165ºF. During the cooking time, skim off any foam on the surface.
  • 2. When it's done, transfer the chicken to the bowl of a stand mixer and set aside. Drain the broth through a fine sieve sitting over a large bowl or large measuring cup; discard the solids.
  • 3. For the recipe, 9 cups is needed therefore add more broth to get the volume asked for and transfer the 9 cups of broth to a Dutch oven. Add lemon zest, stir and bring it to a boil. Add rice and cook for about 15 minutes or until done, stirring often.
  • 4. Meanwhile, shred the chicken finely using the paddle attachment on a stand mixer; set aside.
  • 5. When the rice is plump, add the shredded chicken and stir well. Reduce the heat to medium.
  • 6. In a mixing bowl, whisk eggs until frothy. Slowly pour in the lemon juice, whisking constantly. Temper the egg mixture by adding the hot broth a little at a time, whisking constantly.
  • 7. When the eggs are warm, add the mixture to the broth and whisk very well.
  • 8. Turn off the heat and season with freshly ground black pepper and salt; taste and adjust if necessary. Add chopped parsley, combine well and serve.

I found this Greek soup in a recipe book my Mom has, called "The Best Soups In the World". By Clifford A Wright It is one delicious soup too...smells wonderful as it stews on the stove top. It's relatively easy to make also, always a plus. Sometimes I serve it over rice, but by all means eat it just as is. My photos.

1 lb ground beef
1 medium onion, finely chopped
1/4 c cooked white rice
3 Tbsp finely chopped fresh parsley
2 Tbsp finely chopped fresh dill
2 Tbsp extra virgin olive oil
1 tsp salt
1/2 tsp fresh ground black pepper
pinch cinnamon
flour for coating meatballs
5 c beef broth
1/4 c unsalted butter
2 green onions, chopped fine
2 large eggs
1/4 c fresh lemon juice

Steps:

  • 1. In a bowl, mix together the ground beef, onion, rice, parsley, dill, olive oil, cinnamon, salt, and pepper.
  • 2. Knead the mixture for a minute, with wet hands to prevent sticking, until well blended. Then form into meatballs about an inch in diameter.
  • 3. As you finish making the meatballs, roll them on a platter filled with some flour until coated on all sides and set aside.
  • 4. In a pot, bring the broth, butter, and green onion to a boil over high heat.
  • 5. Add the meatballs a few at a time (so the broth stays at a boil), then reduce the heat to low, cover, and simmer until the meatballs are cooked through and the rice is tender, about 30 minutes.
  • 6. When the 30 minutes are almost up beat the eggs in a small bowl, then whisk in the lemon juice a little at a time, beating constantly.
  • 7. Add a ladle full of hot broth to the lemon and egg mixture, beating all the time. Now add the lemon and egg mixture to the meatball soup, stirring the whole time, and as soon as it's added remove from the heat and serve.
  • 8. Add more salt and pepper to taste. Serve over rice if desired.

Tips:

  • Use fresh lemons for the best flavor.
  • Be careful not to boil the soup after adding the egg-lemon mixture, or it will curdle.
  • Serve the soup immediately, garnished with fresh dill or parsley.
  • If you want a thicker soup, you can add a cornstarch slurry (equal parts cornstarch and water) to the soup before adding the egg-lemon mixture.
  • You can also add other vegetables to the soup, such as carrots, celery, or potatoes.
