1 tablespoon capers, drained, rinsed and crushed
1 tablespoon extra-virgin olive oil (the good stuff)
Zest of 1/2 lemon plus 1 tablespoon lemon juice
Big pinch kosher salt
Freshly ground black pepper
1 small shallot, sliced
2 tablespoons sea salt flakes
Zest of 1 lemon
6 slices sourdough bread, toasted
1 avocado, sliced
2 to 3 heirloom tomatoes, sliced
2 tablespoons salted sunflower seeds

Steps:

  • For the ricotta mixture: Add the ricotta, capers, olive oil, lemon zest and juice, salt and some pepper to a bowl. Set aside and allow the flavors to meld.
  • For the layers: Add the shallots to a bowl, cover with ice water and soak for 10 minutes prior to using.
  • Add the sea salt and lemon zest to a bowl and combine with your fingers.
  • To build: Top each slice of bread with some of the ricotta mixture, 2 slices avocado, 3 slices tomato and some shallots, sunflower seeds and lemon salt to finish. Cut diagonally.

1 cup shredded red cabbage (from 1/4 head)
1 teaspoon fresh lemon juice
1 teaspoon extravirgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
8 slices pumpernickel bread, lightly toasted
5 ounces Boursin, room temperature
1/2 English cucumber, thinly sliced into rounds (about 1 cup)
2 ripe but firm avocados, peeled, pitted, and sliced

9 grain bread with sprouts, tomato and red onion
2 Avocados, diced
2 scallions, diced
1 cucumber, diced
4 radishes, diced fine
2 tablespoons tamari
2 teaspoons sesame oil
1/4 teaspoon garlic, minced
2 tablespoons nutritional yeast
1/2 cup bean or radish sprouts
1/2 teaspoon sesame meal

Steps:

  • In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.

2 slices whole wheat bread
2 tablespoons mayonnaise
6 slices avocados, tossed with a little
lemon juice
1/3 cup fresh mushrooms, sliced

2 slices bacon, cooked and cut in half (optional)

Steps:

  • Preheat the broiler.

12 very thin slices white sandwich bread

1/2 pound purchased or premade thinly sliced rare roast beef

  • In small bowl, mash avocado with fork. Stir in lemon juice, chives, salt, and pepper. Spread avocado mash over 6 slices bread, dividing evenly.
