AVOCADO EGG SALAD TOAST

Avocado Egg Salad Toast image

I had a surplus of avocados after purchasing too many for an event. A few days later, I was making egg salad sandwiches for lunch and had the fantastic idea to use avocado to bind it together instead of traditional mayo. Not only was this version unbelievably delicious but the healthy fats in the avocado make this a much better option than the traditional mayo-laden version. -Shannon Dobos, Calgary, Alberta

AVOCADO TOAST WITH EGG

Avocado Toast with Egg image

I love avocado toast, and if you add an egg to it you have a full meal. Sometimes I use balsamic vinegar to flavor the avocado instead of the lemon juice. You can make the egg any way you like, but I like it best fried or poached.

1/2 avocado
1 hard-cooked egg, chopped
Kosher salt and freshly ground pepper
1 slice whole-grain bread, toasted

Steps:

  • Lightly mash avocado in a small bowl. Stir in egg and season with salt and pepper. Spread mixture over toast and sprinkle with chives.

  • Use fresh herbs: Elevate the flavor profile by incorporating fresh herbs like cilantro, parsley, or chives. These herbs add a refreshing touch and aromatic depth to the salad.
  • Season to taste: Adjust the seasoning according to your preference. Start with a base of mayonnaise, salt, and pepper, then add additional seasonings like lemon juice, Dijon mustard, or garlic powder to achieve your desired flavor balance.
  • Toast bread to perfection: To achieve a crispy and flavorful base for your avocado egg salad toast, toast the bread of your choice to your desired level of doneness.
