Time 25m

Yield 3 to 4 servings

Number Of Ingredients 4

8 large eggs
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Toast, for serving

Steps:

  • Crack the eggs into a mixing bowl. Whisk the eggs until the yolks and the whites are cohesive and light yellow.
  • Add the butter to a nonstick pan and heat over medium-low heat. When the butter is melted, add the eggs and 1/2 teaspoon salt. Continue moving the eggs with a rubber spatula; after a few minutes, some curds will start forming. Keep stirring and scraping the pan until the eggs come together, are creamy and look almost like a custard. This process can take between 15 to 20 minutes. Remove the pan from heat. Season with salt.
  • To serve, spoon the eggs onto the toast. Top with freshly ground black pepper.

AVOCADO TOAST WITH EGG

Avocado Toast with Egg image

I love avocado toast, and if you add an egg to it you have a full meal. Sometimes I use balsamic vinegar to flavor the avocado instead of the lemon juice. You can make the egg any way you like, but I like it best fried or poached.

EASY EGG AND AVOCADO TOAST

Easy Egg and Avocado Toast image

Forget tortilla chips! Seeded whole grain bread, toasted to its full potential, is avocado's real soulmate. After a lifetime of knowing this power couple, I decided to throw some subtle spice and acid their way to better complement the healthy fats, especially when an egg is involved. Works the same if you skip the egg and make it vegan!

Tips:

  • To achieve the creamiest scrambled eggs, use a combination of butter and olive oil to cook them. The butter will add richness and flavor, while the olive oil will help prevent the eggs from sticking to the pan.
  • For the perfect avocado toast, choose ripe avocados that are slightly soft to the touch. This will ensure that the avocado is creamy and flavorful.
  • To make the avocado toast even more decadent, try using a sourdough or whole-wheat bread. These breads will provide a hearty and flavorful base for the avocado and eggs.
  • For a pop of color and freshness, top the avocado toast with sliced cherry tomatoes, diced red onion, or chopped cilantro.
  • If you're looking for a vegetarian or vegan option, you can replace the eggs with mashed chickpeas or tofu.

Conclusion:

Avocado toast with creamy soft scrambled eggs is a delicious and versatile breakfast, brunch, or lunch option. It's easy to make and can be customized to your liking. With its creamy avocado, fluffy eggs, and crispy bread, this dish is sure to satisfy your cravings. Whether you're a fan of classic avocado toast or you're looking for something a little more unique, this recipe has something for everyone.
