SAUTéED BABY BELLA MUSHROOMS

Sautéed Baby Bella Mushrooms are easy, elegant, and full of delicious flavor!

Provided by Brita Britnell

Categories     Side

Time 15m

Number Of Ingredients 7

1 pound of baby bella (cremini) mushrooms
2 tablespoons of unsalted butter (vegan as desired)
1 tablespoon of olive oil*
2 cloves of garlic, finely minced
Salt and pepper to taste
2 tablespoons of fresh herbs, I prefer thyme (other fresh herbs work well here as well!)
Optional squeeze of lemon juice

Steps:

  • Start by thoroughly rinsing the baby bella mushrooms under water. Pat them dry and then thinly slice (about ¼ inch thick). If you buy pre-washed and sliced mushrooms, you can skip this step.
  • In a large skillet, combine the butter and olive oil over medium-high heat. Once the butter is fully melted and the oil is hot, add in the sliced mushrooms with a good pinch of salt and freshly cracked black pepper. Cook for 5 minutes. Around this time, you'll end up with a decent bit of excess moisture in the pan from the mushrooms and this is okay.
  • Add in the garlic and thyme (or other herbs if using), stir, and cook for an additional 3-4 minutes. Most of the moisture from the mushrooms should have evaporated but if not, you can drain it off. Garnish with herbs, a squeeze of lemon juice, and ENJOY!

1 teaspoon fennel seed, 1/3 palmful
1 small onion, finely chopped
3 garlic cloves, grated or finely chopped
1 lemon, zested
1 cup shredded asiago cheese
1/2 cup breadcrumbs, a couple handfuls
1 10-ounce box frozen chopped spinach, defrosted and wrung dry in a clean kitchen towel
1 10-ounce box frozen chopped spinach, defrosted and wrung dry in a clean kitchen towel
Salt and pepper
Salt and pepper
2 tablespoons EVOO (extra-virgin olive oil)
1/4 cup pine nuts or chopped almonds

Steps:

  • Wipe the mushrooms clean with a damp cloth. Remove the stems and finely chop them. Preheat the oven to 400 degrees F. In a large mixing bowl, combine the ground meat, fennel seed, onion, garlic, lemon zest, half of the cheese, the chopped mushroom stems, breadcrumbs and spinach and season with salt and pepper. Brush lightly with EVOO and stuff the mixture into the caps.
  • Arrange the caps on a rimmed baking sheet or in a baking dish. Leave some room around each mushroom to prevent the caps from getting steamy. Sprinkle the remaining cheese and the nuts on the caps and transfer to the oven. Bake until the mushrooms are tender and the filling is cooked through, about 25 minutes. Serve warm.

Creamy Pasta Skillet with Baby Bella Mushrooms image

This is a classic pasta dish with baby bella mushrooms that the family always asks me to make! It's a creamy, easy-to-put-together meal everyone loves!

Provided by Bri Horst

Time 30m

Yield 5

Number Of Ingredients 19

½ (16 ounce) package penne pasta
4 tablespoons butter
1 (16 ounce) package sliced baby bella mushrooms
½ tablespoon minced fresh garlic
½ pound diced bacon
1 medium yellow onion, diced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried minced onion
1 teaspoon ground black pepper
1 tablespoon garlic powder
¼ teaspoon ground thyme
¼ teaspoon salt
1 (16 ounce) jar Alfredo sauce
2 ½ cups milk
1 (8 ounce) package shredded mozzarella cheese
½ cup shredded Parmesan cheese, divided
¼ teaspoon chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • While pasta cooks, melt butter in a skillet over medium heat; add mushrooms and garlic. Cook and stir until mushrooms until soft, about 5 minutes. Add bacon and onion and cook and stir until the onion is transparent, about 5 minutes. Stir in oregano, basil, dried parsley, dried onion, pepper, garlic powder, thyme, and salt, which should soak up any grease or liquid in the pan. At this point, everything should look like it's covered in almost a paste.
  • Stir in Alfredo sauce. Pour in 2 cups of milk; pour remaining 1/2 cup into the Alfredo sauce jar to clean out and pour into the skillet. Mix everything together over low heat; things will be very thin and runny, and that is what you want. Add mozzarella and 1/2 of the Parmesan cheese. Mix well and let simmer until thickened.
  • Fold drained pasta into the sauce. Plate up portions and sprinkle with remaining Parmesan cheese and fresh parsley.
