This kid-friendly dish is about as simple as it gets, my friends. If you don't have the time to prepare the homemade barbecue sauce, simply make sure to buy a quality bottled sauce. This recipe is from "Emeril at the Grill" by Emeril Lagasse.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 3

8 whole chicken leg quarters
Salt and freshly ground black pepper, to taste
2 cups Homemade BBQ Sauce

Steps:

  • Preheat a grill to medium-low, and brush the grate with oil.
  • Season both sides of the chicken legs with salt and pepper. Place the chicken on the grill, skin side down, and cook, adjusting the chicken's position and turning the pieces occasionally, until it appears to be about halfway cooked, about 15 minutes. Then use a basting brush to brush the chicken legs with the barbecue sauce, and continue to cook, turning the pieces frequently and reapplying barbecue sauce each time the chicken is turned, until it is cooked through and an instant-read thermometer inserted into the thickest part registers 160 to 165 degrees, 15 to 20 minutes. Serve the chicken hot or warm.

Yield Makes 4 servings

Number Of Ingredients 18

Barbecue sauce:
2 tablespoons vegetable oil
1/4 cup tomato paste
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1/2 cup apple cider vinegar
1/2 cup fresh orange juice
1/3 cup light brown sugar
1/3 cup mild-flavored (light) molasses
2 tablespoons Worcestershire sauce
2 teaspoons mustard powder
Kosher salt
Chicken:
1 3 1/2- to 4-pound chicken, cut into 10 pieces (breasts halved)
2 tablespoons 4-3-2-1 Spice Rub

Steps:

  • For barbecue sauce:
  • Heat oil in a medium saucepan over medium heat. Add tomato paste and cook, stirring often, until paste turns brick-red, about 2 minutes. Add garlic powder, onion powder, paprika, cayenne, and black pepper. Cook, stirring, until fragrant, about 1 minute. Add vinegar, orange juice, brown sugar, molasses, Worcestershire sauce, mustard powder, and 3 cups water. Cook, stirring occasionally and scraping up any browned bits, until reduced by half, 50-60 minutes; season with salt.
  • For chicken:
  • Prepare grill for medium heat. Season chicken with 4-3-2-1 Spice Rub. Grill, turning occasionally, until lightly charred, 15-20 minutes. Continue grilling, turning and basting with barbecue sauce often, until chicken is cooked through and an instant-read thermometer inserted into the thickest part of thigh registers 165°F, 8-10 minutes longer.
  • DO AHEAD: Barbecue sauce can be chilled 1 week ahead.

HOMEMADE BBQ SAUCE

This Homemade BBQ Sauce is used in the recipe for Backyard Barbecued Chicken.

Categories     Food & Cooking     Cuisine-Inspired Recipes     Southern Recipes

Yield 4 cups

Number Of Ingredients 12

2 tablespoons vegetable oil
3/4 cup chopped yellow onion
2 tablespoons chopped garlic
4 cups ketchup
1/2 cup packed dark-brown sugar
2 tablespoons cane syrup
1/2 cup cider vinegar
1/4 cup Worcestershire sauce
3 tablespoons red hot sauce
2 tablespoons yellow mustard
2 tablespoons Creole Seasoning
1/2 teaspoon crushed red pepper, or more to taste

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring, for 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add all the remaining ingredients, and bring to a boil. Lower the heat to a simmer and cook, stirring occasionally, until the sauce has thickened and the flavors have married, 15 to 20 minutes. Remove from the heat and set aside to cool.

Tips:

  • Use a flavorful marinade: The marinade is what gives the chicken its flavor, so make sure to use one that you like. The recipe in the article uses a simple mixture of olive oil, lemon juice, garlic, and herbs, but you can use any marinade you like.
  • Cook the chicken over indirect heat: This will help to prevent the chicken from drying out. If you're using a charcoal grill, place the coals on one side of the grill and the chicken on the other side. If you're using a gas grill, turn off one of the burners and place the chicken over the unlit burner.
  • Cook the chicken until it is cooked through: The best way to tell if the chicken is cooked through is to use a meat thermometer. The chicken should reach an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: This will help the juices to redistribute throughout the chicken, making it more tender and flavorful. Let the chicken rest for at least 5 minutes before serving.
  • Serve the chicken with your favorite sides: The recipe in the article suggests serving the chicken with roasted potatoes and grilled vegetables, but you can serve it with any sides you like.

Conclusion:

Backyard barbecued chicken with homemade BBQ sauce is a delicious and easy-to-make dish that is perfect for a summer cookout. By following the tips in this article, you can make sure that your chicken is cooked perfectly and that your BBQ sauce is flavorful and delicious. So fire up your grill and get cooking!
