Number Of Ingredients 9

1 1/2 lbs potatoes, peeled and cut into 1-inch cubes
salt
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons tabasco brand chipolte pepper sauce
1 tablespoon Dijon mustard
1/2 teaspoon finely chopped garlic
3 slices bacon, cooked and crumbled
2 hard-cooked eggs, coarsely chopped

Steps:

  • Place potatoes in a large saucepan and cover with water; add 2 teaspoons salt and bring to a boil.
  • Reduce heat to medium and cook 12 to 15 minutes or until potatoes are tender. Drain and cool.
  • Meanwhile in a small bowl, combine sour cream, mayonaise, Tabasco sauce, mustard and garlic; mix well.
  • Place potaotes in a large bowl with bacon and eggs. Add dressing and toss to coat.
  • Season to taste with salt.
  • Cover and refrigerate.

Tips:

  • Select the right potatoes: Choose firm, waxy potatoes like Yukon Gold or red potatoes, as they hold their shape well and won't become too mushy in the salad.
  • Cook the potatoes properly: Boil or steam the potatoes until they are tender but still slightly firm. Overcooked potatoes will become too soft and fall apart easily.
  • Cool the potatoes thoroughly: Before adding the potatoes to the salad, let them cool completely to prevent the dressing from becoming watery.
  • Use a flavorful dressing: The dressing is key to a great potato salad. Use a combination of mayonnaise, sour cream, Dijon mustard, and vinegar for a classic taste.
  • Add your favorite mix-ins: Customize the potato salad by adding your favorite ingredients, such as bacon, cheese, hard-boiled eggs, celery, or pickles.
  • Chill the salad before serving: For the best flavor, chill the potato salad for at least 30 minutes before serving. This allows the flavors to meld and the salad to firm up.
