BACON AND POTATO FRITTATA WITH GREENS

Bacon and Potato Frittata with Greens image

This is a wonderful meal anytime of day or night. My grandfather used to make frittatas quite often. Instead of finishing a frittata under the broiler he would cook it halfway, put a plate on top of the pan, flip the pan over, and slide the frittata back into the pan to cook the other side. Sometimes a frittata would stick; other times the hot oil would drip on him as he performed this maneuver. It was during these moments that I learned all the really good Italian curse words I still use to this day.

This is a very tasty alternative to a usual "run of the mill" omelette. My mother found this recipe in "Hometown Cooking" (by Better Homes and Gardens), and now it's a weekend breakfast favorite in my family. My Mother omits the green onion, and cooks sliced yellow onion with the potatoes.

Tips:

  • Prep your ingredients: Before you start cooking, wash and chop your vegetables, grate your cheese, and cook your bacon. This will help you save time and ensure that everything is ready when you need it.
  • Use a good quality nonstick skillet: This will help to prevent the frittata from sticking and make it easier to flip.
  • Don't overcrowd the pan: If you're using a small skillet, cook the frittata in batches. Overcrowding the pan will make it difficult for the frittata to cook evenly.
  • Cook the frittata over medium heat: This will help to prevent the bottom from burning while the inside cooks through.
  • Don't flip the frittata too early: Wait until the bottom is golden brown and the edges are set before you try to flip it. Otherwise, it may fall apart.
  • Let the frittata cool slightly before serving: This will help it to set and make it easier to slice.

Conclusion:

This bacon and potato frittata with greens is a delicious and easy-to-make breakfast, lunch, or dinner option. It's packed with flavor and nutrients, and it's sure to be a hit with your family and friends. So next time you're looking for a quick and satisfying meal, give this frittata a try!
