2 tbs olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
150g short-cut bacon, diced
2 Desiree potatoes, peeled, diced
2 carrots, peeled, halved lengthways, chopped
2 stalks celery, thinly sliced
1 zucchini, chopped
2 x 400g cans Ardmona Chopped Tomatoes
5 cups beef or vegetable stock
1/3 cup flat-leaf parsley leaves, chopped
Grated parmesan, to serve

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion, garlic and bacon. Cook, stirring often, for 3-4 minutes until onion is tender.
  • Add potatoes, carrots, celery and zucchini. Cook, stirring occasionally, for 5 minutes
  • Stir in tomatoes and stock. Cover and bring to the boil over medium-high heat.
  • Reduce heat and simmer, partially covered with a lid and stirring occasionally, for 1 hour or until thick and vegetables are very tender. Season soup to taste. Stir through parsley.
  • Ladle soup into bowls, sprinkle with parmesan and serve

400 g bacon, bones
2 celery ribs
2 1/2 liters cold water
350 g split peas

Steps:

  • Chop all vegetables and put all the ingredients in a large saucepan and bring to the boil.
  • Simmer briskly until the peas have dissolved and meat is falling off the bacon bones. (Approx 2 1/2 hours.)
  • Remove the bones, remove meat from the bones, chop and put back in the saucepan. (You can puree the vegetable mix before putting the meat back in if you desire a more traditional"Pea& Ham Soup".)

2 ounces bacon, preferably slab, chopped
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 small onion, thinly sliced
1/2 head cauliflower, trimmed into 1 1/2-inch florets (about 2 1/2 cups)
Coarse salt and freshly ground pepper
8 ounces orecchiette
3/4 cup finely grated Parmesan cheese (1 1/2 ounces), plus more, shaved, for garnish
1/2 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • Preheat oven to 400 degrees. Heat oil in a small skillet over medium heat. Cook bacon until crisp, about 8 minutes. Transfer to paper towels using a slotted spoon. Reserve drippings.
  • Toss sweet potato, onion, and cauliflower with reserved drippings. Season with 3/4 teaspoon salt and 1/4 teaspoon pepper. Roast on a rimmed baking sheet, tossing halfway through, until tender and caramelized, about 35 minutes.

1 beef chuck roast (4 pounds), tied
Coarse salt and ground pepper
2 tablespoons unsalted butter
1 large yellow onion, diced small
3 garlic cloves, minced
3 tablespoons chopped fresh rosemary leaves
1 cup dry red wine, such as Cabernet Sauvignon
1 can (28 ounces) diced tomatoes
1 pound small white potatoes, halved or quartered if large

2 cups pearl onions, trimmed and peeled

Steps:
