BACON BLUE CHEESE POTATO SALAD
I'm not crazy about potato salad, but this one is definitely the exception. It's creamy and the flavor is wonderful. I got the recipe from my friend Devon, who got it from somebody else. Don't be put off by the blue cheese - the flavor is not overwhelming at all. I didn't know it had blue cheese until I asked for the recipe.

Tips:
- Use high-quality ingredients: The better the ingredients, the better the potato salad will be. Use fresh, waxy potatoes, crispy bacon, and a good quality blue cheese.
- Cook the potatoes properly: The potatoes should be cooked until they are tender but still hold their shape. Overcooked potatoes will be mushy and fall apart.
- Let the potatoes cool completely: Before adding the dressing, let the potatoes cool completely. This will help the dressing to adhere to the potatoes better.
- Use a light hand with the dressing: The dressing should be flavorful but not overpowering. You can always add more dressing if needed, but it's difficult to remove it once it's been added.
- Serve the potato salad chilled: Potato salad is best served chilled. This will help the flavors to meld together and the potatoes will be more firm.
Conclusion:
Bacon blue cheese potato salad is a classic side dish that is perfect for any occasion. It's easy to make and always a crowd-pleaser. With its creamy, tangy dressing, crispy bacon, and sharp blue cheese, this potato salad is sure to be a hit.
