Steps:
- 1. In a small skillet, fry bacon until crisp. Drain well and crumble. In a medium bowl combine cream cheese, blue cheese, mayonnaise, and bacon.
- 2. Layer 5 sheets of phyllo dough brushing each with melted butter. Cut into 8-3 inch squares. Repeat with remaining phyllo dough.
- 3. Fill each phyllo square with 1 teaspoon of filling. Bring sides up towards the center and pinch edges to seal. Brush with butter. Place on a cookie sheet and bake in preheated 375* oven for 20-25 minutes until golden brown. Serve warm and watch your guests enjoy :-)
Tips:
- Use high-quality ingredients: The better the ingredients, the better the puffs will taste. Use thick-cut bacon, sharp blue cheese, and freshly grated Parmesan cheese.
- Don't overmix the batter: Overmixing will make the puffs tough. Just stir until the ingredients are combined.
- Let the batter rest: Letting the batter rest for 30 minutes will allow the flavors to meld and the flour to absorb the liquid. This will result in a more tender puff.
- Bake the puffs at a high temperature: Baking the puffs at a high temperature will help them to rise and brown quickly. This will prevent them from becoming greasy.
- Serve the puffs immediately: Bacon blue cheese puffs are best served hot out of the oven. They can be served as an appetizer or a main course.

Bacon blue cheese puffs are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks.
