2 ½ cups shredded cheddar cheese, divided
1 cup unsalted butter, 2 sticks, room temperature
2 cups all-purpose flour, plus more for dusting
1 tablespoon paprika
1 tablespoon garlic powder
2 ½ teaspoons salt, divided
5 tablespoons ice water
4 strips bacon
2 cups small broccoli floret
6 large eggs
1 cup milk
½ teaspoon pepper
pie weight, coffee beans, or dried beans

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Add 2 cups (200 g) of cheddar cheese and the butter to a large bowl. Mix to combine with an electric hand mixer or stand mixer.
  • Add the flour, paprika, garlic powder, and 2 teaspoons salt and mix well. Add 3 tablespoons of ice water and mix. Add the remaining ice water 1 tablespoon at a time. The dough should hold together when pinched, but crumble apart if you break it up in your hand. If it seems too dry, add a bit more ice water.
  • Transfer the dough to a clean surface and knead with your hands until it comes together. Shape the dough into a disc, then wrap in plastic wrap and chill in the refrigerator for 30 minutes.

1/2 cup mayonnaise
1 tablespoon dried minced onion

12 bacon strips, cooked and crumbled
8 medium fresh mushrooms, chopped

1/2 lb bacon, fried crisp and crumbled (about 12 slices)
1/2 cup broccoli (fresh or frozen, finely chopped)
1 cup cheddar cheese, grated (I like Sharp)
1/3 cup onion, minced
4 eggs
2 cups heavy cream
3/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Heat oven to 425°.
  • Prepare pastry for one-crust pie (if using mix or homemade crust recipe) and bake as directed in 9" pie plate or quiche pan.

There may be other recipes out there that are similar but I promise that this recipe came out of her own imagination and a bit of discussion with me around the kitchen counter. Tell you what, this turned out great!

1 pie crust (Unbaked for a 9-inch or 10-inch pie plate)
1 1/2 cups cheddar cheese (Shredded. Andrea used mild cheddar)
8 ounces powdered cheese sauce mix
1/4 cup white onion (chopped)
1 tablespoon minced garlic
1 lb bacon (chopped and cooked until almost crisp)
5 large eggs (Slightly beaten. Maybe 4 - some "large" eggs are larger than others)
2 1/2 cups half-and-half
1/8 teaspoon sage
1/8 teaspoon greek basil
salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Chop and steam broccoli for 5 minutes.
  • 3. Cook the bacon and remove just before it becomes crisp, set aside. Save 2 tablespoons of the bacon grease in the frying pan.
  • 4. Saute onions and garlic in the 2 tbs. of bacon grease until onions are soft and translucent.
  • 5. Slightly grease the pie pan and place the pie crust inside. Crimp and flute the edge of the crust so it is above the rim of the pie pan.
  • 6. Place pie pan on a large cookie sheet. Quiches are notorious for bubbling over and the cookie sheet will save you from having to scrape burned cheese off the bottom of your oven.
  • 7. In a medium bowl, mix cheese sauce, half-and-half, beaten eggs, salt, pepper and herbs, set aside.
  • 8. Spread the shredded cheddar on the bottom of the pie shell in a single layer.
  • 9. Add the bacon on top of the cheese in a single layer.
  • 10. Add the garlic and onion spreading it over the beacon as evenly as possible.
  • 11. Layer the broccoli on top.
  • 12. Pour the cheese/egg/milk mixture over the top until everything is well covered.
  • 13. Bake in the oven for 45 to 60 minutes or until a knife inserted in the center comes out clean.
  • 14. Let it cool on a wire rack for 15 minutes and serve.

1 refrigerated pie crust, softened as directed on box (from 15-oz box)
4 eggs
2/3 cup whipping cream (I use sour cream with chives)
7 slices bacon, cooked, crumbled (about 1/3 cup)
1 cup finely shredded parmesan cheese (4 oz)
1 cup finely shredded cheddar cheese (4 oz)
1/2 teaspoon dried basil leaves

1 c milk
1 tsp salt
1/2 tsp pepper
1 deep dish pie crust, uncooked
