Growing up in PA Dutch country this became one of my favorite ways to eat tomatoes. This is a hand-me-down from Mom. This pie is as good for leftovers as it is first time around.

10 slices bacon, in 1-inch pieces
1 (8 ounce) can crescent roll dough
2 medium tomatoes, sliced
1/2 teaspoon salt
pepper
5 slices American cheese
1/2 cup flour
paprika
3 eggs, separated
3/4 cup sour cream
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Fry bacon until crisp and drain on paper towels.
  • Unroll Crescent dough and separate into 8 triangles.
  • Place triangles into 9-inch pie plate with narrow point toward center. Press pieces together to form crust.
  • Sprinkle bacon over crust.
  • Top with tomato slices.
  • Season with salt and pepper.
  • Place cheese slices on top of tomatoes.
  • Beat egg whites until stiff and set aside.
  • In large mixing bowl, combine egg yolk, sour cream, flour, salt, and a dash of pepper.
  • Blend well then gently fold beaten egg whites into mixture until a few lumps of egg white remain. Do NOT overblend.
  • Pour mixture over cheese layer and sprinkle with paprika.
  • Bake for 35-45 minutes or until crust and top are golden brown and knife inserted in center comes out clean.
  • This may be assembled and refrigerated 3-4 hours before baking.

1 pastry shell, unbaked
1 pound sliced bacon, cooked and crumbled
1 large tomato, peeled and sliced
1 cup shredded cheddar cheese
3 large eggs, separated
3/4 cup sour cream
1/2 cup all-purpose flour
1/2 teaspoon salt
Paprika

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Cool completely. , Sprinkle bacon over the crust. Top with tomato and cheese. In a large bowl, beat the egg yolks, sour cream, flour and salt until smooth. In another large bowl, beat egg whites until stiff. Fold into sour cream mixture; spread over cheese. Sprinkle with paprika. , Bake at 350° until a knife inserted in the center comes out clean, about 45 minutes. Let stand 5-10 minutes before cutting.

Please taste the filling as it is cooking before you add stock. Try to find a salt free or make it yourself because the bacon and cheese are salty enough. Also- thicken to your own liking

Number Of Ingredients 20

3 cups plain flour
2 tablespoons dried onion flakes
2 teaspoons paprika
1/4 teaspoon fresh ground black pepper
1 cup butter, cold and chopped
1 egg, beaten
6 -8 tablespoons cold water
4 slices bacon, diced
1 large onion, diced
1 kg of casserole beef, small dice
6 small eggs
3/4 cup flour
3 tablespoons oil
5 fresh garlic cloves
2 tablespoons paprika
1 teaspoon dried marjoram
1 teaspoon dried thyme
2 liters low sodium beef broth (I used homemade)
100 g cheddar cheese (to taste)
2 tablespoons parmesan cheese (optional)

Steps:

  • Pastry.
  • Put flour, onion flakes, pepper and paprika in a food processor. Add the butter and process until crumby.
  • Add half the cold water to the beaten egg and pour in while still mixing. Add water very slowly until it starts to resemble dough. Don't let it form a ball.
  • Divide dough in half, roll one lot out and line your pie dish. Prick and cover with dried beans and bake on 200 celsius until almost cooked -- about 15 minutes.
  • Wrap the other dough in wrap and refrigerate until needed.
  • Filling.
  • Sauté onion, bacon, garlic and paprika in the oil in a pan until cooked just through.
  • coat the beef with the flour and add to the pan, cook it for about five minutes and then add the stock slowly stirring it constantly to avoid lumps.
  • Depending on what meat you are using, add enough water to cook it down for a while (1-4 hours) and keep adding it as needed. Add the Marjoram.
  • When the meat is just about tender enough cook it down until it is thick.
  • Empty out the beans and pour the filling into the case. Break the eggs straight on top, spread out evenly and cover with the cheese (Save some for the top of the pie).
  • Roll out the pastry and put it on top. Prick a few air holes.
  • Brush with egg wash and sprinkle some extra bacon pieces, grated cheese (not too much and the parmesan on top. You can grind some pepper over it too.
  • Bake until golden brown on high for about 30 mins or so -- watch it!

2 (8 ounce) packages Red Leicester cheese
2 ¼ pounds red potatoes, cubed
1 (8 ounce) package unsmoked back bacon
3 ½ ounces Cheddar cheese, grated
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cut Red Leicester cheese into 1/2-inch cubes; set aside.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until almost cooked through, 10 to 15 minutes.
  • While the potatoes are cooking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until completely cooked but not too crisp, about 10 minutes. Drain bacon slices on paper towels and roughly chop when cool enough to handle.

2 tbsp light olive oil
140g rindless dry cure bacon , about 8 rashers, diced
25g butter
4 leeks , thinly sliced
2 tsp thyme leaves
140g fontina or gruyère , rind removed, cut into cubes
1 large egg
500g pack puff pastry , thawed if frozen

Steps:

  • Heat 1 tbsp of the olive oil in a frying pan and fry the bacon for 3-4 mins until it begins to crisp. Tip onto a plate lined with kitchen paper. Add the remaining olive oil to the pan with the butter and allow to melt before adding the leeks and thyme. Season and cook for 3-4 mins until softened. Place in a bowl with the crisp bacon and cheese, and allow to cool.
  • Whisk the egg in a small bowl with 1 tsp water, to make an egg wash. Cut one-third off the pastry and, on a lightly-fl oured surface, roll out to make a 15cm x 30cm rectangle, and place on a baking sheet. This will form the base of the tart. Pile the leek mixture in the middle of the base, leaving a 2cm surround. Roll the remaining pastry into a larger rectangle which will cover the leek mixture easily. Brush the edges of the pastry base with egg wash, then carefully lay over the larger rectangle and smooth the surface to get rid of any trapped air. Cut away excess pastry to form a tidy edge and glaze with egg wash. With the back of a fork, press to seal the edges. Chill for 30 mins.
  • Heat oven to 200C/fan 180C/gas 6. Brush the top of the pastry with more egg wash and season the top before baking. Cook for 10 mins, then reduce the heat to 180C/fan 160C/gas 4 and cook for 25-30 mins until puffed up and golden brown. Serve either hot or at room temperature.
  • To make ahead, freeze at end of stage 2 for up to a month, or refrigerate for up to a day.

3 packages (8 ounces each) cream cheese, softened
4 large eggs, room temperature, lightly beaten
1/4 cup 2% milk
1 cup shredded Swiss cheese
1/2 cup sliced green onions
6 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

  • Roll the pastry into a 13-1/2-in. circle. Fit into the bottom and up the sides of an ungreased 9-in. springform pan. Lightly prick the bottom.
