2-3 tomatoes (sliced)
1 9-inch deep dish frozen pie crust (baked to package directions)
1/2 cup green onions (chopped)
1/4 cup basil (chopped)
1/2 cup cooked and crumbled bacon
freshly ground black pepper (to taste)
1/2 cup mayonnaise
1 cup shredded cheese (mozzarella or cheddar)

Steps:

  • If using a frozen pie crust, you'll need to let it defrost on the counter for about 10 minutes, then prick the crust with a fork (this keeps the crust from getting too puffy while baking).

1/4 cup grated parmesan
Cayenne pepper
3/4 cup mayonnaise
3 tablespoon lemon juice
1/4 cup fresh chopped basil or 2 teaspoons dried basil

2 cups grated cheddar cheese
8-10 plum tomatoes, peeled and sliced or 2 cups whole canned tomatoes, drained for 30 minutes and chopped
6 scallions, thinly sliced

Steps:

  • Preheat oven to 350 degrees. Roll out pie crust and sprinkle with parmesan and cayenne. Cover crust with a sheet of wax paper and press cheese and cayenne into crust by hand or with a rolling pin. Place pie crust into a 9 inch pie plate and crimp edges. In a small bowl stir together mayonnaise, lemon juice, basil and salt and pepper. Sprinkle 1/2 cup cheese in bottom. Top with 1/3 of the tomatoes and scallions. 2 1/4 lbs potatoes, peeled and cubed
1 tablespoon vegetable oil
9 ounces bacon, cut into strips
2 ounces butter
4 onions, finely sliced
1 pinch sugar
5 ounces cheddar cheese, grated

  • Bring a pan of salted water to the boil and cook the potatoes until soft. Drain and mash.
