BETTY'S CREAMY CHICKEN, BACON AND POTATO BAKE

Betty's creamy chicken, bacon and potato bake image

Creamy comfort food made into a complete meal - delicious! I like chicken thighs as they remain moist during oven baking. This reheats beautifully and can be made ahead. Note - you can add mushrooms when you are frying the bacon if you are a fan of them.

Number Of Ingredients 8

2 pounds or 1 kilo of potoates
6 - 8 bacon rashers
2 pounds or 1 kilo of chicken thighs, cut into thirds
1 tin cream of chicken soup
1 teaspoon minced garlic

BACON AND BROWN SUGAR TOPPED SWEET POTATO BAKE

Bacon and Brown Sugar Topped Sweet Potato Bake image

This is not your typical sweet potato casserole that you have during the holidays, it's more savory than sweet. The potatoes are whipped and creamy with just enough spices to keep it from being bland. I really love the hint of garlic, it's a nice surprise. The topping really makes this dish special. The brown sugar crystalizes...

Time 2h5m

Number Of Ingredients 9

4 large sweet potatoes
1/4 c milk
1/2 c butter, softened
2 eggs
1 tsp seasoned salt
1/2 tsp pepper
1/4 tsp garlic powder
6 slice bacon
3 Tbsp brown sugar

Steps:

  • 1. Bake sweet potatoes for approximately one hour in a 350 degree oven. Let cool until you can touch them and peel sweet potatoes.
  • 2. Preheat oven to 350. Grease a casserole dish with cooking spray.
  • 3. In a large bowl, mash sweet potatoes. With electric mixer, beat in all ingredients EXCEPT bacon and brown sugar. Beat until well blended and spread evenly into casserole dish.
  • 4. Fry bacon until crisp.
  • 5. Crumble bacon and combine with brown sugar. I like to process mixture in food processor.
  • 6. Sprinkle evenly on top of sweet potato mixture.
  • 7. Bake for 30-35 minutes.

Tips:

  • Choose the right potatoes: For this recipe, it's best to use a starchy potato, such as Russet or Yukon Gold. These potatoes will hold their shape better than other varieties when baked.
  • Cut the potatoes evenly: This will help them cook evenly. If the potatoes are cut too large, they may not cook all the way through.
  • Don't overcrowd the baking dish: Make sure there is enough space between the potatoes so that they can cook evenly.
  • Season the potatoes well: Use a combination of salt, pepper, garlic powder, and onion powder to season the potatoes. You can also add other herbs and spices to taste.
  • Use a good quality bacon: The bacon is a key ingredient in this recipe, so it's important to use a good quality bacon that you enjoy the taste of.
  • Cook the bacon until it's crispy: This will give the potatoes a nice smoky flavor.
  • Don't overcook the potatoes: The potatoes should be cooked until they are tender, but not mushy.

Conclusion:

Bacon potato bake is a classic comfort food dish that is easy to make and always a crowd-pleaser. With just a few simple ingredients, you can create a delicious and satisfying meal that the whole family will love. So next time you're looking for a quick and easy weeknight dinner, give this bacon potato bake recipe a try. You won't be disappointed!
