4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 thin slices prosciutto

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Melt the butter in a skillet over medium heat. Cook the leek and garlic in the melted butter until the leek softens and the garlic turns translucent, about 5 minutes. Remove the skillet from the heat and stir in the Gouda until melted. Divide the cheese mixture among the chicken breasts; roll the chicken around the filling. 2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper

4 boneless chicken breasts
4 slices bacon
3 -4 ounces smoked gouda cheese
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika

Steps:

  • Combine, cayenne, garlic powder, paprika and pepper.
  • Flatten chicken breasts to approx 1/4" thickness.
  • Season both sides of chicken with the cayenne mixture.

2 tablespoons butter
1 (4 pound) whole chicken
salt and pepper to taste
1 teaspoon dried thyme
2 carrots, cut in chunks
paprika to taste
8 slices bacon
2 cups beef broth

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Rub butter over the entire chicken. Season with salt, pepper and thyme. Place the carrots inside the cavity, and tie the legs together. Place the chicken breast side up in a roasting pan. Lay bacon strips across the top of the chicken, and secure with toothpicks. Sprinkle with paprika. Pour the beef broth into the roasting pan - do not pour over the bacon.
  • Roast for 15 minutes in the preheated oven, the reduce the heat to 350 degrees F (175 degrees C). Baste with some of the broth. Continue to roast for 1 hour and 15 minutes, or until the internal temperature is 180 degrees F (82 degrees C) when taken in the thickest part of the thigh. Baste every 15 minutes with the broth.
  • Remove the bacon and discard toothpicks. Roast the chicken for 15 more minutes to brown the skin. Transfer to a serving platter, and remove the ties. You may eat the bacon, but it is best to discard the carrots.

2 chicken breasts, boneless, skinless, pounded to 1/2-inch thickness
1 teaspoon thyme
1/4 teaspoon garlic powder

2 tablespoons white wine

  • Preheat oven to 375°F.
  • In an oven-safe skillet (NOT cast iron), cook bacon over medium heat or until crispy and fat-rendered. Set bacon slices aside on a paper towel to drain. Once cooled, crumble and set aside. Do not drain bacon fat from skillet.
  • While bacon is cooking, season chicken breasts on both sides with thyme, garlic powder, onion powder, salt and pepper. Then dust both wides of each breast with 1 tbs. flour each.

Like the store bought stuff? Well, this homemade smoked gouda will knock your socks off! The secret to smoking your own cheese is to use low heat, and an ice bath so that the cheese doesn't melt. You can also use pepper jack cheese if you want it a bit more spicy. This cheese, with sautéed onions, makes an awesome quesadilla. It is useful for any recipe calling for gouda or cheddar too.

1 lb gouda cheese or 1 lb monterey jack pepper cheese
1 wood chips, apple, for smoking
ice cube, 2 trays

Steps:

  • Start 5 briquettes of charcoal on one side of a large barbecue and wait until they are white hot.
  • Meanwhile, soak one handful apple wood chips in water.
  • Fill an aluminum roasting pan with ice, and put on the other side of the grill.
  • Put a piece of tinfoil over the ice, and lay the cheese on top of that so the cheese is slightly below the level of ice, making a boat with the tinfoil so that water cannot come inside.
  • Drain the water from the wood chips.
  • Add half of the wood chips, and put the lid on. Smoke for ten minutes, and then flip the cheese over and smoke for another ten minutes, adding more wood chips if necessary. Remove, and refrigerate immediately.
  • Notes:.
  • Though I have found apple wood to be the best for cheese, you can use other wood, but it should be a light smoking wood such as pecan, or maybe maple. Mesquite, and Hickory are definitely not recommended as the smoke is too intense for cheese.

3 boneless skinless chicken breasts, pounded even
flour
butter
8 ounces smoked gouda cheese, cut up
1 cup low sodium chicken broth
2 teaspoons gingerroot, freshly grated
3 green onions, sliced
3 slices smoked gouda cheese
1/4 cup sour cream or 1/4 cup plain yogurt
water, and
cornstarch, slurry if needed

Steps:

  • In a large skilled, heat up about 3 Tablespoons butter at medium heat.
  • Flour chicken and shake off excess.
  • Brown chicken breasts and remove from heat, keep warm.
  • Add chicken broth to pan, deglazing browned bits. Bring to a boil, then lower heat and add smoked gouda chunks and stir till cheese melts. Add in grated ginger root.
  • When cheese is melted, add slurry if you want a thicker sauce, then add in sour cream or yogurt. Blend well.
  • Carefully add chicken breasts back in, top with one sliced of smoked gouda on each, sprinkle green onions and remove from heat. Cover until cheese on top melts.
  • serve with rice or noodles. LOTS of sauce.

I was sifting idly through ingredients in my fridge one morning, when Divine Inspiration or something like it struck, and I came up with the most winning combination of ingredients, ever: Smoked Gouda and Bacon...and then I made an omlette. You can customize it in any way you like; adding different types of cheeses, meats, vegetables, minerals...there are myriad possibilities. I like it simple.

3 slices bacon
3 -4 eggs
1 tablespoon milk (optional)
salt and pepper (to taste)
1/2 cup smoked gouda cheese

Steps:

  • Firstly, fry up your bacon until it's crispy, in a frying pan set on medium heat.
  • Remove from pan. (If you're health conscious, or you just don't like to eat grease, pat the bacon with a paper towel to remove some of the grease.) After it's cooled, crumple into smallish pieces and set aside.
  • Dump most of the grease out of the pan, but reserve about a tbsp or so in which to cook the eggs.
  • Crack the two eggs in a separate bowl and whisk with milk, salt, and pepper until a bit frothy. (The milk makes the omlette fluffier, but isn't necessary).
  • Pour into the pan. Top with the smoked Gouda and bacon.
  • Cook until the bottom of the omlette (the part in contact with the pan) has become a light shade of brown, then attempt to flip one side of the omlette over, folding it in half.
  • Continue frying until the eggs are cooked through and the cheese is nice and melted.
  • Put it on a plate, and enjoy.

Tips:

  • To ensure the chicken is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 165°F (74°C) in the thickest part of the breast.
  • For a crispier skin, pat the chicken breasts dry before searing them. You can also increase the oven temperature to 450°F (230°C) for the last 5-10 minutes of cooking.
  • If you don't have smoked Gouda, you can substitute another type of hard or semi-hard cheese that melts well, such as cheddar, mozzarella, or Parmesan.
  • To make a creamy sauce, whisk together some of the pan juices from cooking the chicken with a little bit of heavy cream or milk. You can also add some chopped fresh herbs, such as parsley, thyme, or rosemary.
