1 head cauliflower
4 large eggs
1 tsp salt
2 tsp oregano
2 cloves of garlic, minced
6 slices of bacon
6 tbsp tomato paste
1/2 large red onion, chopped
1/2 cup tomato, chopped
2 cups arugula
1 sliced avocado
2 cups grated cheddar cheese (not so paleo option)

Steps:

  • Preheat the oven to 375 degrees. Cut the head of cauliflower into sections and pulse in food processor until a rice-like consistency is reached. Pour into a bowl and whisk in eggs, salt, oregano and garlic. Spread the mixture onto an 11 x 17 lined baking sheet. Bake at 375 degrees for 12-15 minutes until the edges are golden. Saute the bacon and onion in a pan then chop the bacon into pieces. Take the flatbread out of the oven and let it cool. Spread the tomato paste on the flatbread and sprinkle the optional cheddar cheese. Scatter the red onion slices, tomato, bacon and avocado on the flatbread. Broil the flatbread for 5 minutes. Remove the flatbread from the oven and sprinkle the arugula leaves over the top.

1/3 cup bread and butter pickle brine
Kosher salt and freshly ground black pepper
6 slices thick-cut bacon, cut into 6-inch strips
1/2 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon Worcestershire sauce
2 cloves garlic, grated
1 avocado, sliced
4 slices Pullman bread, toasted
4 Bibb lettuce leaves, washed

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the tomato slices in a baking dish or plate. Pour the pickle brine over the tomatoes and season with pepper to taste. Place in the refrigerator for 30 minutes or up to 2 hours.

Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.
