BACON MUSHROOM TOMATO & CHEESE STRATA - BRUNCH CASSEROLE

Bacon Mushroom Tomato & Cheese Strata - Brunch Casserole image

This was served at my sister-in-laws baby shower along with a wonderful salad with balsamic dressing and seasonal fruits. It was so elegant. I had to ask for the recipe it was so delicious! My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. Try changing the cheese and toppings with your favorites! Very versatile dish! Enjoy.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

6 ounces uncooked egg noodles

1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 (28 ounce) can stewed tomatoes
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • Cook noodles according to package directions; drain.
  • In a large skillet, cook bacon over medium heat until crisp.
  • Remove to paper towels to drain, reserving 2 tablespoons drippings.
  • In the drippings, saute green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes.
  • Stir in tomatoes.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, for 10 minutes.
  • Stir in the noodles.

  • Transfer to a greased 2-qt. baking dish.
  • Top with cheese and remaining bacon.
  • Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.

Tips:

  • Select ripe, flavorful tomatoes. Roma tomatoes are a good choice, as they have a lower water content and more concentrated flavor.
  • Use high-quality bacon. Thick-cut bacon will provide more flavor and texture to the casserole.
  • Don't overcrowd the pan when cooking the bacon. This will prevent the bacon from cooking evenly and becoming soggy.
  • Use a large casserole dish to ensure that the ingredients are evenly distributed. A 9x13 inch dish is a good size.
  • Bake the casserole until the top is golden brown and the center is bubbly. This will take about 30-40 minutes.
  • Let the casserole cool for a few minutes before serving. This will allow the flavors to meld and the casserole to set.

Conclusion:

Bacon tomato casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover bacon and tomatoes. With its combination of salty bacon, sweet tomatoes, and creamy cheese, this casserole is sure to be a hit with everyone at the table. Plus, it's a great way to make sure you're getting your daily dose of vegetables.
