Steps:

  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

One 5-pound boneless pork roast, fat trimmed
1/4 cup extra-virgin olive oil
Kosher salt and cracked black pepper
12 to 15 fresh parsley leaves
12 to 15 fresh sage leaves
12 strips bacon
4 pounds fingerling potatoes
2 red onions, sliced into 1 1/2-inch julienne

Steps:

  • Preheat the oven to 400 degrees F.
  • Coat the pork with olive oil and sprinkle with salt and pepper. Arrange the parsley and sage leaves along the top of the roast.
  • Lay the bacon horizontally in a roasting pan, with the strips touching. Set the pork roast in the center of the pan and fold the bacon over to wrap the roast.
  • Add the potatoes and onions to the pan, to border the roast. Transfer to the oven and roast until the bacon is crisp and the pork reaches an internal temperature of 140 degrees F on an instant-read thermometer, about 1 1/2 hours.
  • Transfer the roast to a cutting board and rest for 10 to 15 minutes. Slice and serve with the potatoes and onions.

1 head garlic, top sliced off
2 tablespoons olive oil
2 pork tenderloins (about 1 to 1 1/2 pound each) trimmed of excess fat
Salt and freshly ground black pepper
1 tablespoon chopped fresh rosemary
12 fresh sage leaves
1 tablespoon chopped fresh thyme
12 1/4-inch thick slices bacon
Lemon Glazed Sweet Potatoes, recipe follows
2 cups fresh lemon juice
2 cups granulated sugar
1 tablespoon finely chopped lemon zest
5 large sweet potatoes, peeled and cut into 1/2-inch dice
2 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Preheat oven to 300 degrees F. Place garlic in a small ramekin, drizzle with 1-tablespoon olive oil, and wrap in foil. Bake until soft, about 45 minutes. When cool enough to handle, squeeze garlic flesh from head into a small bowl.
  • Arrange tenderloins on work surface. Rub the top each tenderloin with 1/2 of the roasted garlic and season with salt and pepper. Mix together the herbs and scatter half of the mix over the garlic on each tenderloin. Wrap 6 strips of bacon around each tenderloin and tie bacon in place with kitchen twine.
  • Heat oven to 375 degrees F. Heat oil in a medium, skillet over medium-high heat. Sear the tenderloins until golden brown on all sides. Transfer seared tenderloins to medium roasting pan; place in the oven and cook to medium doneness about 8 to10 minutes. Transfer tenderloins to cutting board and let stand 10 minutes. Remove twine before carving.
  • Combine juice, sugar and zest in a small non-reactive pan and reduce to 1/2 cup. Set aside.
  • Preheat oven to 375 degrees F. Toss sweet potatoes in oil and roast in a large ovenproof skillet. Roast until lightly golden brown and just cooked through. Remove the pan from the oven and place on a burner over medium heat. Add the glaze to the potatoes and toss to coat evenly. Saute potatoes until all are glazed.

12 slices bacon (3/4 pound)
2 cups canola oil
2 tablespoons unsalted butter, melted
1 tablespoon honey
1 tablespoon chopped scallions, white and some green
1/2 teaspoon chopped fresh parsley
Kosher salt and freshly cracked pepper

Steps:

  • Cut each potato lengthwise into 6 wedges. Wrap each wedge with a slice of bacon and secure each end with a toothpick. Place the oil and potato wedges in a large saute pan-the oil should come at least halfway up the sides of the potatoes. Over medium heat, cook the potato wedges until tender, turning occasionally, about 20 minutes. Increase the heat to high and cook until the bacon is crisp, 3 to 5 minutes. Transfer to a paper towel-lined plate to drain.
  • In a small bowl, mix the melted butter, honey, scallions, parsley, 1/4 teaspoon pepper and salt to taste.
  • Carefully remove the toothpicks from the potato wedges and transfer the potatoes to a platter. Drizzle with the melted-butter mixture.

2 1/2 lbs boneless pork loin
salt
black pepper
1/4 lb hickory smoked bacon
5 sprigs fresh rosemary
1/3 cup extra virgin olive oil
5 garlic cloves, crushed
2 lbs boiling potatoes, cut in chunks

Steps:

  • Preheat oven to 350 degrees.
  • Season the pork with salt and pepper. Wrap the bacon around the pork and tie with string. Tuck the rosemary here and there under the string.
  • Heat the oil in a large, heavy casserole dish over medium heat. Add the roast and brown it lightly on all sides, about 4 minutes. (Keep turning the meat so the rosemary won't burn.) When the roast has a golden color, turn the heat off and add the potatoes and garlic. Mix the potatoes, garlic, and oil well. Season the potatoes with salt and pepper.
  • Put the casserole dish in the oven and bake for 45 minutes. Baste the roast with pan juices while cooking. Check the roast for doneness by piercing with a knife. The roast is done when the juices that come out are clear and NOT pink.
  • Take the roast out of the oven, remove the string, slice the meat, and serve with potatoes and some pan juice. (I like mine with a salad and baked sweet potatoes.).

12 slices thinly sliced hardwood smoked bacon, cut in half crosswise
1 (24 ounce) package Simply Potatoes Sour Cream and Chive Mashed Potatoes (unheated)
3 eggs
3/4 cup finely shredded cheddar cheese, divided use
1/4 cup fresh chives, cut into 1-inch pieces

Steps:

  • Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
  • Using a 24-cup, non-stick mini muffin pan, line bottom and sides of each mini muffin cup with a half strip of the par-cooked bacon in a circular fashion, making a well in the center, folding or creasing if needed to fit.
  • In a large mixing bowl, beat potatoes, eggs, and 1/2 cup of the cheese with an electric mixer on medium-high speed until smooth and fluffy.
  • Transfer potato mixture to a large pastry bag fitted with a large star tip. Pipe potato filling evenly into bacon-lined muffin cups in a spiral fashion (cups will be full and potato spirals will extend beyond the height of muffin cups).   • Preheat the oven to 350.
  • Wrap each potato with a bacon strip and secure at each end with a toothpick. This is really easy to do with a fingeling potato as the long shape is ideal.
  • Place the bacon wrapped potatoes in a roasting dish uncovered.
  • Cook uncovered in the oven for 75-90 minutes or until desired crispness of the bacon. Turning over one time (you can remove the toothpicks before turning them) about half way through.
  • Serve.

2 boneless, skinless chicken-breast halves (about 12 ounces total), each cut into 2 cutlets
4 slices bacon (about 4 ounces total)
1/2 medium red onion, cut into 8 wedges
4 cups watercress (from 1 to 2 bunches), thick stems removed
1 tablespoon plus 1 teaspoon Champagne or white-wine vinegar

Over medium heat cook the potatoe wedges until tender, turning occasionally (about 20 min.) then turn the heat up to high and cook until the bacon is crisp. (3-5 min).
