Kosher salt and freshly ground black pepper
1 beef filet steak, 8 to 10 ounces, 2 inches thick
1 piece thin bacon
1 tablespoon butter, more if needed
1 tablespoon olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Generously salt and pepper both sides of the steak. Wrap the steak with the bacon and secure with a toothpick.
  • Heat an ovenproof skillet over medium-high heat. Add the butter and olive oil. When melted, add the steak to the skillet and sear on both sides until a really nice color, about 1 minute per side.
  • Remove the skillet from the stovetop and place into the oven to finish cooking. Cook until medium rare, 7 to 10 minutes. Remove from the oven and allow to rest for 5 minutes before serving.

2 lbs beef tenderloin, cut thick 1 . 5 - 2 inches
1/4 lb bacon
2 tablespoons butter
2 sprigs fresh rosemary or 4 fresh thyme sprigs
1 head peeled crushed garlic
2 tablespoons olive oil
1/2 cup red wine

Steps:

  • preheat oven to 420 degrees F.
  • wrap each steak with a strip of bacon.
  • put the olive oil in a large pan and heat the pan until you can move the olive oil around easily.
  • put your steaks in the pan and if you hear a sizzling noise that is good if not take the steaks out and heat it longer.
  • cook the steaks for 1 min on each side.
  • place the rosemary (or thyme) sprigs, garlic, and butter in the pan with the steaks.
  • flip steaks and continue to cook them 1 minute on each side until they have cooked a total of 3 minutes on each side.
  • put the steaks in the oven for 8 mins .
  • remove steaks from the oven and let them rest for 2 minutes.
  • remove the rosemary (or thyme) sprigs and the garlic from the pan, leaving all of the liquid.
  • pour red wine into the liquid left over in the pan.
  • cook the juices and red wine over low heat until boiling.
  • add the juice from the meat resting pan into the mix of liquids left over in the pan and it makes an amazing sauce.
  • plate the steak and pour the sauce over it. ENJOY!

½ large onion, minced
1 clove garlic, minced
1 cup ketchup
¼ cup molasses
2 tablespoons packed brown sugar
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce

2 teaspoons liquid smoke
1 teaspoon chili powder
1 teaspoon hot sauce (such as Cholula®)

2 large sweet onions
12 hickory-smoked bacon strips
1/2 cup packed brown sugar
1/2 cup balsamic vinegar
1/4 cup molasses
2 tablespoons barbecue sauce

Steps:

  • Cut each onion into 12 wedges. Cut bacon strips in half widthwise; wrap a piece of bacon around each onion wedge and secure with toothpicks. Place in an ungreased 13-in. x 9-in. dish. , In a small bowl, combine the brown sugar, vinegar, molasses and barbecue sauce; pour 1/2 cup over onions. Cover and refrigerate for 1 hour, turning once. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Grill onions, covered, over medium heat for 10-15 minutes, turning and basting frequently with reserved marinade.

BALSAMIC ONIONS:
1/8 cup - canola oil
2 - medium onions sliced thin (1/4")
1/8 tsp. - salt
1/4 tsp. - pepper
1/4 cup - sugar
1/2 cup - good balsamic vinegar
STEAK:
1 1/2-2 - tbl. canola oil
1 lb. - filet mignon, cut into 4 pieces
4 slices - bacon
- coarse ground black pepper to taste
- seasoning salt to taste, i use johnny's

Steps:

  • Sauce: In a large frying pan heat oil over high heat. Add onions and lower the heat to medium. Add salt and pepper, mix thoroughly. Sweat onions down for about 15 minutes stirring often. You want the onions very soft. Add sugar and reduce heat to low. Mix well and cook 5-10 minutes or until most of liquid is absorbed. Add balsamic vinegar. Mix well and cook for 20-40 minutes until sauce becomes a dark rich syrup. Steak: Pre-heat ove to 450 degrees. Heat oil in an oven proof skillet. (Metal or cast iron.) Wrap a piece of bacon around each filet, secure with toothpick if needed. Sprinkle steaks with salt and pepper. Sear each side of filets about 2 minutes. Place skillet in oven and bake 10 minutes. Steakes will be medium rare. (8 minutes for rare. 12 minutes for medium.) Remove filets from skillet. Allow to rest 1-2 minutes. Pour warm onions over top and serve. I like to serve this with my Twice-Baked Alfredo Potatoes and Roasted Asparagus Wrapped in Prosciutto. Salad and garlic bread on the side. *Remember to use heavy hot pads (or several) when taking skillet out of oven! Handle will be VERY hot!
