Number Of Ingredients 11

1 ¼ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup butter
1 ½ tablespoons Irish cream liqueur (such as Baileys®)
½ cup packed brown sugar
¼ cup sugar
1 large egg
1 teaspoon vanilla bean paste
½ cup semisweet chocolate chips
cooking spray

Steps:

  • Whisk flour, baking soda, and salt together in a bowl and set aside.
  • Heat butter in a small pa on low heat until melted. Remove from heat, stir in Irish cream liqueur, and let cool.
  • Combine white and brown sugar in a large bowl and pour in cooled butter and Irish cream liqueur. Beat with a hand mixer for about 1 minute. Add in egg and mix well, then add vanilla paste.
  • With the mixer on low, slowly add in mixed dry ingredients, about 1 cup at a time, until just mixed together. Fold in chocolate chips and refrigerate dough for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray 2 baking sheets with cooking spray.
  • Using a 1 1/2 tablespoon scooper, scoop out golf-ball sized balls from the cookie dough and set onto the baking sheets, leaving room in between.
  • Bake in the preheated oven until the bottom edges are browned, 9 to 10 minutes. Transfer to a wire rack and cool for 10 to 15 minutes.

Categories     Beverages

Time 10m

Yield 4 serving(s)

Number Of Ingredients 4

8 ounces Baileys Irish Cream
8 ounces Amaretto
1/2 teaspoon ground cinnamon, plus additional
ground cinnamon, for garnish

Steps:

  • Combine the Baileys and amaretto in a small saucepan.
  • Heat over medium-low heat until warm but not hot.
  • Stir in the 1/2 teaspoon cinnamon.
  • Pour into martini glasses, sprinkle with cinnamon, and serve.

Tips:

  • Soften the butter: Make sure the butter is at room temperature before you start baking. This will help the cookies spread and create a chewier texture.
  • Use a mixer: A stand mixer or hand mixer will help you cream the butter and sugar together until they are light and fluffy. This is important for creating a smooth cookie dough.
  • Chill the dough: After you have formed the cookie dough into balls, chill it in the refrigerator for at least 30 minutes. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Use parchment paper: Line your baking sheets with parchment paper to prevent the cookies from sticking. This will also make it easier to transfer the cookies to a cooling rack.
  • Don't overbake the cookies: Bake the cookies until the edges are just starting to turn golden brown. Overbaking will make the cookies dry and crumbly.

Conclusion:

These Baileys cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their soft and chewy texture, rich chocolate flavor, and hint of Baileys Irish Cream, they are sure to be a hit with everyone who tries them. So next time you're looking for a special cookie recipe, give these Baileys cookies a try. You won't be disappointed!
